Baked this. I have reduced the sugar to 90g and added abit more of the cinnamon and some nutmeg to balance it out. Overall it was a very good carrot cake. Moist, easy and delicious!
Hello, You have to calculate the conversion of new cake, then you can get the correct quantities of ingredients. We use 15cm round pan, if you use 18cm, the conversion is 1.44, all ingredient need to x1.44. 😊

Hi, for the cake tin - I understand that used 6inch. May I know the height of the tin you have used ? Is 7.6cm height ok ? Will it cause the heat not able to reach out to the cake while baking ? I gonna start baking this two days. Hope to hear from you soon. 😀
Hi Sandra, you can cut a small piece of carrot and shape it into a carrot shape, then cut an opening in the top and insert the thyme or any green vegetable leaves. Voila~ 😊
Hello I Kozden, the eggs are about M~L size, each weigh 64-65g/each egg. Icing tends to be very high in sugar, so it looks very white, if use less sugar, the color won't be that white, the easiest way to reduce sugar in cakes is using less icing, maybe you can line the icing sugar instead to spread it on top. Sugar simply provides sweetness and moisture, usually reduce the sugar in any cake recipe by 10% without compromising its flavor or texture. You can start with 10%, then 15%... 😊

Hello Vivian, carrot cake is very moist, so once baked, please allow cake to cool completely, and chill at fridge before serve. 😊
