claud!!! i'm gonna give you a very helpful italian trick, save! the! pasta! water!
it's liquid gold from all that salt and starch. before draining the pasta just take a glass measuring cup and fill it about half way with that pasta water (just go directly into the pot with it) and keep it on the side when you're ready.. then pour a splash into the sauce and it will come together much easier! ( keep stirring the pasta, sauce, pasta water all together until you feel like it's well coated. you can always keep adding more splashes if needed)
