If you try fleshing over your knee followinh trapping worlds technique - you may never do a beaver on the beam again. I like it for otters too,might try other critters this season. Don't get me wrong i like 2 handed fleshing as well but over the knee is the traditional way Trappers in 1700 did it over their knee by candle and fire light with no beam or draw knife in sight.
I use the same fleshing knife. But I clean skin beaver.
Lots of options. An ice auger blade sharpener or Tony's sharpener work well, or you can use a sharpening stone.
