I disagree with 'busy parents'. I regularly prep a large container of crudites for the week and it takes ~20 minutes. Carrots, celery, cauliflower, radishes. It saves enough $ that I can get cherry tomatoes and then I have veggies for the week. Now people with disabilities absolutely need accomodation, but assuming elderly people can't prep veggies is a little ageist.
on an archaeology dig once we stopped for a snack break and boy... that has to be the most satisfying apple i've ever eaten. the silence filled with 10 of us crunching apples at turbo speed in the woods definitely added to the ambiance lol.

I love to use the "baby carrots" when I make the roast beef in the crockpot. I just rinse and put the bag of them with the roast beef along with some small red potatoes, seasoning and diced onion. Then let the crockpot do its magic :)
