How to Brew Taiwanese High Mountain Tea

  • In this video I demonstrate how to brew Taiwanese High Mountain Oolong in the Gongfu tea style. These tea leaves I personally bought from the producer in Taiwan, the tea pot and drip tray are from a UK based company called Jing, and the Cha Hai and cups are from Hong Kong.

    Normally before throwing the first brew away, we use it to warm we use it to warm the tea cup too. But I appreciate your effort in introducing Taiwanese tea ceremony to the western world! Good job!

    This is the way the Chinese do it. A lot of youtube videos have elaborate methods which are not common amongst the Chinese. Usually though both the teapot and serving jug are glass so you can see the colour.

    You didn't let your leaves breathe and open between the initial washing and the first steeping. Doing so may improve the flavor you get from the first brew. Also, by gradually increasing the brewing time for each round, you should be able to get up to get more rounds of tea from those leaves, allowing for an extended tea appreciation experience and maximizing the value you get from your investment in high quality leaves. You have to get the timing exactly right though.

    Mr Liang’s instructions: fill tea leaves roughly cover bottom of pot. Full pot with boiling water halfway or above, allow to steep for 1 min leaves should open. Empty and full again this time brew for around 30s then pour. Each round increase brew time. Enjoy. 好喝

    Can I drink the water I use to rinse the tea instead of throwing it away? To reuse the leaves, should I let them dry first or can I just leave them in there? I'm new to this but I'm loving it.

      +Adriana Barrios you could drink it, but it's not gonna taste good. You leave the leaves in the pot, they don't need to dry, you can brew three or so times within the space if an hour or two.
