      Can you use regular long rice noodles? The noodle texture seems to matter in the finished dish.

      You translated "mao" correctly as drunken from the Thai. However, you did not attempt to translate "kee" at all.

    I live in a rural area and I have been putting alot of thought into plant based proteins that I can source locally and on a budget. Soaked and prepared black beans, peanuts and peanut butter, sunflower seeds have all been favorites lately.

      Sunflower seed butter is easy to make and has a terrific nutty flavor. If you love sunflower seeds, you will love this. You do need a food processor or high speed blender, though.

      In India, half the population is vegetarian.. we get our proteins from Lentils, legumes & paneer. All kinds of Dal, chickpeas, kidney beans, black eyed peas, soy nuggets or granules.. all these are dry & stay in the pantry for years.. Dal cooked with greens, a a side of stir fried veggies & rice or wheat roti is a staple everyday balanced meal of protein, veg & carb. Yoghurt & indian pickles add the probiotics. Sometimes there’s a side salad & a toasted lentil papad for crunchy fun. The meal ends with banana & fennel seeds for good digestion & movement.

    Oh my gosh, Wil! I nearly dove through the screen to get the finished dish in my mouth. You do an amazing job cooking, filming and speaking instructions and descriptions. If I were dining at a restaurant or using a meal kit service run by you, I'd let go and trust you to order for me. As it is, I'm rethinking my garden plans with your recipe ingredients in mind. Maybe you should partner with Sow True Seeds (my fave) or similar to create organic non-GMO seed sets to sell as companions to your cookbooks, since more people are growing their own food these days. It's an easier way to make sure you have the right ingredients on hand. Bright blessings.

    I was searching for something else on my favourite online store for Asian food (unfortunately, it's almost impossible to shop for Asian food in person where I live) when I saw the same noodles you used and immediately added them to cart.     Looks like a good adaptable base recipe where you could switch out the tofu and vegetables for other vegetables and even switch out the noodles for other kinds.

    Such a good recipe! You can load it up with veg like mushrooms, onion, zucchini and carrot as well. I like to add msg, white pepper, brown sugar and vegan fish sauce to my sauce mixture as well

    Yum! I have Cooking with Confidence and love it. I am awaiting The Ramen cookbook in the mail as we speak. My daughter and I really want to improve our cooking skills as vegans (I am a newbie-1yr).
