I just had this dish for the first time at a local Senegalese restaurant in Dallas. I made it home (it was takeout) and I started eating the dish and I cut open the fish and saw the filling and I was like... WTH???? lol.. I didn't know what on earth the green stuff was but when I turned on the bright light and inspected it I saw it was some sort of greens. I enjoyed the dish. Interesting. I should have been told the fish was 'stuffed'. I wouldn't have been so shocked.

April Haulcy Hi April, it depends on whoever is cooking the fish. When I make the white rice and fish I fry it to get a golden brown color for decoration. With the red one there is no difference you can either fry it or put it in the sauce.
Awa instead of using can tomato paste, please use only tomato paste in bottle or jars. Chemical are used in cans which cause cancer. Thank you Senegalese Muso!
