In Chinese culture, it's crucial to include something symbolic particularly fish, as the word for fish (鱼 yú) sounds like (余 yú) meaning abundance. The tradition is to always have fish on the table during Lunar New Year for 年年有余 (nián nián yǒu yú), signifying abundance of good wealth and health in the coming year.     Koi Fish Jelly
    Recipe:
    1L milk or plant milk
    100g sugar
    4 1/2 tsp agar agar powder
    1 koi fish mold
    4 Raisin to make the eyes
    Red & yellow food coloring
    Method:
    1) In a saucepan, mix water, agar agar powder and sugar, stir well combined. (Note: Agar-agar needs to be first dissolved in room temp milk, and then brought to a boil.)
    2) Scoop 1-2 tbsp of the boiled jelly mixture into 2 bowls. Then add a few drops of food coloring to the bowls, mix well.
    3) Using back of the spoon, paint the insides of the fish jelly moulds with the colored jelly, to mimic the strips of a koi fish. Place mould in the fridge to set.
    4) Then slowly scoop the remaining milk jelly mixture into the molds. Put back to fridge and set completely.
    5) Unmould the koi fishes from the mould and best enjoyed eaten chilled. Happy Chinese New Year everyone!
