I’ve tried this once before when hosting some vegetarian friends. I used firm tofu, pressed, cubed, and marinated for a few hours in soba sauce. After that I drained the tofu, dusted with corn starch and fried them a bit before tossing in the noodle pan. Also threw in some marinated shiitake mushrooms!
Can’t wait to give this a try for lunch tomorrow! 🙂

I made this recipe tonight and my family loved it. I used beef instead of pork and I added carrots and onions. It was so easy. My "babies", 19 and 23 years old, said they want me to make it again soon using seafood. Thanks for the recipe.

I used to love yakisoba at home, but for more than 20 years now, I can't find the noodles-- they used to be in a supermarket near me, but after a while...
