I’ve tried this once before when hosting some vegetarian friends. I used firm tofu, pressed, cubed, and marinated for a few hours in soba sauce. After that I drained the tofu, dusted with corn starch and fried them a bit before tossing in the noodle pan. Also threw in some marinated shiitake mushrooms! Can’t wait to give this a try for lunch tomorrow! 🙂

I used to love yakisoba at home, but for more than 20 years now, I can't find the noodles-- they used to be in a supermarket near me, but after a while... Now I need to go and buy baking soda, which I haven't bought in years either! This baking soda trick seems to be a wonderful thing.

Thank you, Moe. The baking soda trick is ingenious, I'm using it now all the time and my family loves it. My only suggestion is to drop the baking soda percentage a little bit, I'm probably using 1/3 of the quantity you're suggesting. When I use more than that then the noodles have a strong baking soda aftertaste. I can definitely notice when I'm using too little baking soda and can easily fix that by adding a little more while cooking but it's impossible to take out the aftertaste if too much was added.

I just tried it, even with just veggies (I added carrots and onions and a bit less Worcestershire sauce because I have a kid's palate lol) it tastes GOOD! I am full and happy. Thank you Moe! And assistant Sutan!
