Here in Denmarks it's eaten year round, canned in slightly sweetened tomato sauce and then put on bread with mayo and sometimes boiled egg. Sounds freaky, but tastes great. Mackerel in tomato is a popular topping in Norway, and according to a survey in 2004, this is one of the most preferred types of topping. Canned production was started in the 1950s in Norway. The fact that mackerel in tomato became available in canned form from then on meant that this spread was used on a large scale😊
In Malaysia, canned mackerel in tomato is a pretty common dish. I have it at home for emergencies (although I sometimes eat it in other times). I like cooking it following a famous content creator here (check out khairulaming), where the canned fish would be taken out of the can and grilled, and the sauce would have sauteed onions and chillies added to it before the fish is re-added, then the whole thing is served with white rice.
How do you eat it in Norway? I spread mackerel in tomato from the canned stuff on toast and then grill it and add cheese and a bit shredded onion and melt it.
Mackerel is a very healthy and tasty fish. I am sure most of the people calling it trash are eating farm raised carcinogen salmon with bones like needles from the rapid growth. When I first started fishing in SoCal I was told that bonito was trash fish/cat food. It is...when it's taken off the hook and left in a burlap sack on a hot deck for hours. If you bleed it immediately and put it on ice, it's almost as good as any species of tuna. Post-catch handling and using the proper cooking technique can make 'trash fish' into a delicacy. It's just like barbeque; it turns some of the toughest, least desirable cuts of meat into some of the best food imaginable.
Bonito is one of the fishes used for Japanese fish stock, or dashi. That's the broth that gives a lot of Japanese dishes their signature taste, in combination with soy sauce and mirin. Those SoCal fishermen should be freezing that shit and sending it to Japan.
@@LBCAndrew The only thing I know of called bonito in SoCal is the Striped bonito (Sarda Orientalis). There are evidently several species called bonito in the Atlantic: the Atlantic bonito (Sarda Sarda), skipjack tuna (Katsuwonus pelamis) and the Little tunny (Euthynnus alletteratus). All four of those are relatively fragile and will go bad if not bled and cooled quickly after catch.

Small mackerel like that is a summer staple for me in Norway. I stuff them with fresh parsley, and use string to hold them together. Then roll them in flour and salt&pepper, and fry them in butter until the skin is crispy. (Best to do outside if you can.) Then I make an easy cucumber salad with just sliced cucumber, and splash of vinegar and sugar. Serve with small cooked summer potatos and a generous dollop of sour cream😋 Another great thing is to lightly cure them. Works best with the size you've got there. Fillet them and cover the meat 50/50 with sugar and salt, and a little white pepper (and a sprinkle of whiskey or cognac if you want). Put the two fillets together on a plate (meat to meat), cover with clingfilm and put another plate on top to weigh it down. Put in the fridge for 12 hours, then flip them over, and leave them for another 12 hours. Delicious on bread with a little sweet mustard😀 (Be careful to not let them cure for too long, as thin fillets like that might become too salty.)
A lot of the issue with us Left Coast folks is how we treat the fish after they're caught. Go out on a 1/2 or 3/4 day boat, and the sabas get tossed into a wet gunny sack sitting out in the sun. Not surprisingly, they tend to turn into bloody mush when you do that. Bleed 'em out & ice them down shortly after they're bled out - not bad at all. 👍
