You have thrown away all the nutrients of Palak as they are all dissolved in the water which you have not used. Taste & preserving nutrients in a dish are equally important.
This procedure is called blanching. It’s a very common practice so that the spinach does not lose its color. The boiling and cooling steps are very quick, so it doesn’t lead to much loss of nutrients.

Colour of the palak changes to black after cooking. But here it looks parrot green . how ? Any tip ?
You boil without lid and immediately transfer into cold water color will not change. I am preparing like this
