Step 1: Make The Curing Mixtures
Ingredients:
Base Curing Mixture
* Salt 2 tbsp
* Sugar 1 ½ tsp
* Buttermilk Powder 1 ½ tsp
* Tomato Powder 1 ½ tsp
* MSG 1 tsp
* Onion Powder ½ tsp
* Garlic Powder ½ tsp
* White pepper ¼ tsp
* Disodium Inosinate
* Sodium Guanylate
Nacho Cheese (added to base)
* Cheddar Cheese 2 Tbsp
* Romano Cheese ½ Tbsp
* White Pepper ⅛ tsp
* Cayenne ⅛ tsp
Cool Ranch (added to base)
* Citric Acid ¼ tsp
* Bell Pepper Powder 1 tsp
* Black Pepper ¼ tsp
* Parsley ¼ tsp
* Dill ⅛ tsp
1) Mix all the powdered ingredients together and periodically taste whilst sucking on a Dorito in an effort to perfectly match the flavor.
Equipment
* Spice grinder
* 2 small tasting spoons
* 1 bag Nacho Cheese Doritos
* 1 bag cool ranch Doritos
Step 2: Curing the Salmon
Ingredients:
* 2x 1lb filets of skin-on wild Alaskan salmon
* 1 bowl Nacho Cheese curing mixture
* 1 bowl Cool Ranch curing mixture
1) Rub each salmon filet down in each curing mixture, wrap in plastic, poke holes in the bottom of each plastic wrap, then set on a sheet pan with baking rack on top and let sit in the fridge for at least 3 days.
Equipment
* 1 sheet pan
* 1 baking rack
* Roll of plastic wrap
* Needle to poke
Step 3: Rinsing, Slicing, and Eating the Salmon
Ingredients:
* 2x Dorito-cured salmon filets
* 2x bowls Dorito seasonings
* Sliced and toasted bagels
* Cream cheese
* Capers
* Red Onion
* Tomato
1) Unwrap each salmon filet, rinse off in water, dry on paper towels, add additional seasoning powder on top.
2) Slice the filets to expert thinness (or, y’know, do the best you can) and add on top of a bagel dressed to your desire.

Getting a faceful of Josh was probably hella overwhelming. I think there could be potential for a better episode in the future with this duo, but time is of the essence.

The reason why we didnt get to see the golden retriever in Brad was simply because there was no room to wander. Still a great episode, the awkwardness just made it better

You are right! They didn't cook anything. They mixed predetermined ingredients and tasted something that was made before he got there. Why even bring Brad? He was more like a prop in the video than a character in the show.
Yup, knowing Brad you can tell he's not fond of all the chemicals they used for this recipe , especially on such good quality wild salmon. As soon as he saw all those ingredients his mood went down and he couldn't shake it for the rest of the show. It's obvious that he hated how the salmon turned out, but was too gracious to tell it to Josh straight. I wonder if they even tested the recipe before hand, seems like it's unnecessarily complicated for the sake of entertainment and a waste of good fish.
