Mario manages to get his skin back, while Bowser and Peach die to the center of the moon. Mario then marries Pauline, becomes a plumber with his brother and everyone is happy. That is, until Pauline is kidnapped by that giant ape.
That is true until Mario ditches Pauline and the ape. Then it loops.

Mario needs to stop dating women with political power. They always get kidnapped by creatures.
15 years later, Rosalina and some miners find some broken skeletons. After returning to do DNA tests and find they were Peach and Bowser, they reconstruct their bodies and then try to bring them back to life. They do, but not as the same ones 15 years ago.
Mario saw into the future and knew ahead of time about the "normal" ending, and was like:
"Let's see how YOU like it, Peach!"
Damn, I never realized how big the area was as Mario.

Theoretically I honestly don’t think you need the funnel as I think there was a recent discovery that showed that there’s small invisible platforms outside the 2D section (obviously this was made before that)

In 2-player you can knock the rocks away with cappy, so it isn't an unused function.

The ending would be not very interesting. Without bowser there IS no ending. Without bowser there was no problem in the first place. So therefore, peach would not need saving, therefore, no ending. That means the entire mario franchise would be dead. And no one would ever remember it.
Without bowser mario would just be your ordinary plumber and the mushroom kingdom would be at eternal peace.
