    SWEET CORN DHOKLA
    INGREDIENTS
    BESAN. 2 CUPS
    FRESH CURD. 1 CUP
    WATER. 1 CUP
    SALT. TO TASTE
    SUGAR. 1 TEASPOON
    ENO FRUIT SALT. 1 TO 1.5 SACHET
    OIL. 2 TEASPOONS
    SWEET CORN.(BOILED). 3/4 CUP (CRUSHED)
    LEMON JUICE. 1 TEASPOON
    COCONUT. 1/2 CUP(GRATED)
    FRESH CORIANDER LEAVES. A HANDFUL
    FOR TEMPERING:
    OIL. 2 TABLESPOONS
    MUSTARD SEEDS. 1 TEASPOON
    WHITE SESAME SEEDS 1 TEASPOON
    CURRY LEAVES. 3 SPRIGS
    SWEET CORN. 1/2 CUP(BOILED)
    WATER. 1 CUP
    GREEN CHILIES. 5 TO 6
    PROCEDURE
    MAKE A SMOOTH BATTER BY FIRST WHISKING CURD. ADD WATER AND MIX WELL. ADD THE BESAN SLOWLY AND KEEP WHISKING TO AVOID LUMPS
    ONCE SMOOTH, ADD CRUSHED CORN, SALT, SUGAR AND OIL
    MIX WELL AND KEEP ASIDE FOR 20 MINUTES
    IN A STEAMER POT, POUR WATER REQUIRED FOR STEAMING
    GREASE THE TRAY OR VESSEL WITH OIL IN WHICH YOU ARE MAKING THE DHOKLAS
    ONCE THE WATER COMES TO THE BOILING POINT, ADD ENO FRUIT SALT TO THE BATTER AND THE MOMENT THE BATTER BECOMES FOAMY, POUR IT IN THE TRAY OR VESSEL
    PLACE THE VESSEL IMMEDIATELY INTO THE POT AND COVER
    LET IT STEAM FOR 15 TO 20 MINUTES
    ONCE DONE, CHECK WITH A TOOTHPICK. IF IT COMES OUT CLEAN, THE DHOKLA IS DONE
    POUR THE TEMPERING, GARNISH WITH GRATED COCONUT AND FRESH CORIANDER LEAVES
    FOR THE TEMPERING
    TAKE OIL IN A KADHAI OR WOK
    ADD MUSTARD SEEDS, SESAME SEEDS, CURRY LEAVES, GREEN CHILLIES AND CORN KERNELS
    ADD WATER, SALT AND SUGAR
    BRING TO A BOIL AND PUT OFF THE FLAME
    KEEP ASIDE FOR COOLING
    ALWAYS POUR THE TEMPERING ONLY WHEN BOTH DHOKLA AND TEMPERING ARE AT ROOM TEMPERATURE
