- Old Man Cooking was originally created by Tom (Old Man Cooking). He passed away in 2017, leaving behind a treasure trove of recipes and funny commentary. He passed the torch to his oldest son, who is attempting to maintain his cooking legacy. Thanks to all that have supported him, he was a great father and cook, with a wonderful sense of humor. He is dearly missed.
Today we're smoking some 14 day Dry-aged Beef ribs from Porter Road. We'll be using the Masterbuilt electric smoker with the cold-smoking attachment, modified for heavier smoking.

How I smoked my ribs on the Masterbuilt electric smoker:
Set masterbuilt to 275 degrees and load the cold-smoking kit with pellets.
Apply rub to the ribs and coat all over.
Place ribs in the smoker.
After about 3 hours check color and wrap with foil.
After about 3 hours check temp and tenderness, looking for about 202 degrees.
Wrap in a towel and place in a cooler for an hour.
Cut and serve the ribs.

yep that cold smoker with pellets is great I start out with a half a cup cut it on for 10 minutes and cut it off it self burns after as long as the main smoker is running even at 150 which I tend to start out at to get a added cold smoke then I add a half a cup at a time to keep them from clogging up just make sure you keep the exhaust vent wide open to circulate one cup lasts hours done this way
Those might make a vegetarian have a temporary lapse of reason!

That looks so good. I love fatty meats because the fat makes it so flavorful. May I suggest using punk butcher paper instead of foil.
