This controller doesn’t have any mappable buttons. If you’re referring to mapping buttons in a game that doesn’t typically support a controller the controller can do that but only on android in G-Touch Mode.
I think on your pixel phone the controller may be in the wrong mode. See the led's are light blue and green on the right, the top one is the connection mode indicator. It doesn't match when the iphone is in there. I have the gamesir usb-c and there are 2 modes, you need to switch in the app or hold 2 buttons at the same time I don't remember exactly otherwise it doesn't work..

it can use on lates ios version?
It technically works on the latest iOS version but the phones will not physically fit because of the camera hump.
