  • This gorgeous upside-down pear cake is a wonderful combination of fresh pears in a brown sugar caramel cake and a lightly spiced sponge cake.
    Ingredients
    1 cup self-raising flour
    25g desiccated coconut
    1/2 tsp ground ginger
    60g sour cream
    90ml milk
    1tsp lemon zest
    1/2 tsp vanilla extract
    1 large egg
    1/2 cup caster sugar
    1 pear
    20g unsalted butter
    40g brown sugar
    15ml water
    Fan-bake in pre-heated oven 150 C degree 20 minutes, then switch to regular bake for 40 minutes.
