    No , the cornstarch makes the egg white cling to the meat . A half tsp. Baking soda tenderizes .

      The egg white isn’t even necessary. You all been fooled. I just use cornstarch and that is enough to create the velvet layer.

      @@CarutMencarutno. The baking soda changes the PH and is what tenderizes the meat.

      Yes, I’ve used only egg whites (and it was fine) but adding baking soda kicks it up a notch.

      Yep baking soda is all you need to tenderize, however I prefer baking soda + cornstarch

    When u boil it, doesn’t it left some kind of gooey coating of cornstarch on the surface of the chicken? I really love the tenderness it makes the chicken but not the gooey coating around it.. 😢

      Then you fry it in oil. Make sure your pan stays hot.

      You need a good quantity of water so the temperature doesn’t drop.

    Hot water for stir fry? I've never seen that. Just steam your food for all that.

    Nice video But you really don't need the background music. It makes it hard for me to understand I have sensory issues and I can not separate your voice from the music. Would be much better to do without it. Sorry I can't even listen to the video :(
