    If you've ever traveled to Italy or you've felt in love with Italian cuisine, then I'm pretty sure one dessert, apart from Tiramisu, remained in your heart: Sicilian Cannoli.
    Sicilian Cannoli is one of the most famous desserts in Italy and as simple it may seem, as delicious it is. Cannoli consist of tube-shaped shells of fried pastry dough, filled with sweet ricotta cheese and topped with chopped pistachios, candied fruits or chocolate chips, sprinkled with confectionary sugar. So delicious!
    Ingredients:
    Cannoli shells:
    flour 200g
    cocoa powder 1 teaspoon
    a pinch of salt
    sugar 50g.
    melted butter or lard 30g.
    1 egg and 1 egg yolk
    white vinegar 1 teaspoon
    Marsala wine 2 tablespoons
    Ricotta filling:
    sheep's milk ricotta 350g.
    cow's milk ricotta 350g.
    sugar 200g.
    chopped pistachio / candied oranges (or cherries) / chocolate chips
    Recipe for 12 normal sized Sicilian Cannoli
    Instructions:
    1. The night before making your cannoli, put your ricotta to drain the excess of liquid. (You can also do this step just 7-8 hours before preparing the dessert)
    2. In a large bowl or stand mixer, mix all the Cannoli shell ingredients. Cover with food wrap and let to rest in the fridge for 1 hour.
    3. Meanwhile, prepare your ricotta filling mixing the sifted cheese with sugar.
    4. Roll the cannoli dough until you obtain a 1mm thick dough and shape round disks with a diameter of 10 cm. Your disks must be just a bit bigger than the length of the tube you are going to use.
    5. Wrap the cannoli dough around the tubes (you can easily find Cannoli tubes on Amazon or you can make yourself the tubes using bamboo canes) and seal them using a bit of egg white.
    6. Heat the oil up to about 170°C and fry each of them for about 2-3 minutes.
    7. Let to chill down and remove the tube. Fill your cannoli with ricotta cheese, using a pastry bag, and add the topping you like.
