Perfect oven wing recipe! I make wings once a week and use nearly the same method, my wing "dust" includes garlic and onion powder, and smoked paprika. Cooking method is identical with one twist - when wings temp at 180 I switch my oven from bake to broil and move my sheet pan up to two notches below the broiler and get the wing skin a little blackened. Not that you need my validation, but your technique is spot on! Got to add this - years ago when I first started following here I used the traditional "broiler pan". YOU, SAM, changed my life forever when I saw you using sheet pans and racks. Oh boy, my wife went through the roof when AMZ delivery dropped off a fleet of sheet pans, 1/4s, 1/2s, even a full sheet pan. Today she tells me she can't believe we could have even existed without them.

That's what I use to make my oven wings crispy! A trick with the baking powder, though... Use the aluminum-free version (Rumford?) to avoid getting a weird aftertaste.
Baking powder does include baking soda, which does said, but also has cream of tartar and/or cornstarch to help balance out the bitter flavor from the baking soda.

My Mom has a recipe for a sweet wing marinade/glaze. Just 3 ingredients: Frozen concentrate of lemonade. Catalina dressing. Onion soup mix. It used to be one can, one bottle, one packet. But that was in the '80s when she thought it up. Since then, the companies have changed the packaging sizes, so she has to fiddle with it when she makes it these days.
Please try a few Chicken Kievs boys... Love to see how you'd make that epic meal in a bite. O.k. You can add some rice, noodles, or tatoes. I'll allow it. :)

Hey Sam! Please let me suggest potato starch. I'm liking the results so much better than corn starch! Also, how about this - roast the wings for just a little less time, then at the end, coat the wings with the sauce then finish them under the broiler for a few minutes to caramelize. Now eat them with no muss, no fuss!

Serendipity is that I have wings, an orange, ginger, garlic, and spices to make my dinner. A little seasoned rice flour versus baking powder will give a nice crispy coating.

The baking powder method tastes a bit metallic to me. I do a two stage method (air fryer). Coat with seasoning (s&p) and then toss in flour. Par-bake at 270 for 25 min flipping. Chill then air fry 450 for 8-9 minutes. Mostly I was here for the saucing!!
Sam needs to take a leaf out of chef Frank Proto's "make sure it goes everywhere" book 🙂 I always watch until the end as sometimes there are outtakes and bickering 🥰

Instead of griping that there's no recipe I'm gonna help Make America Cook Great Again by keying it in here: Open 1.5 lb pack of wings. Separate into flats and drummies Dry well. Rest in the fridge uncovered for 2 hrs to overnight. Mix 2 T baking powder, pinch of Salt, Pepper, garlic powder. Toss wings baking powder mix Bake at 425F for about 60 mins, turn three times. Temp to about 180. Chicken breast does good to 150’s but these can take more heat. To an oiled pan, add a T of minced ginger, plus 2 clover garlic. Bloom for one min. Add 3/4 C OJ 3 T soy sauce 1 T rice wine vinegar 2 T brown sugar S&P Red pepper flake. 1 tsp orange Zest Simmer 5 mins. Thicken with a cornstarch slurry. Toss finished wings in sauce. Garnish with sesame seed and sliced scallions.
Pro tip: CAREFULLY peel the orange with a vegetable peeler [to avoid the pith] and whiz the peels up in a tiny food processor [or Vitamix] along with the juice, thej add to the saucepan.

I'm thinking baking soda rather than powder. Sodium bicarbonate enhances the Maillard Reaction (browning) and helps tenderize.

Smoked paprika in the baking powder mixture! Deeper color and super flavor blast.
