Howdy! Salad

I see this salad as a transitional flavor combination for people unfamiliar with Mexican/Tex-Mex cuisines to introduce our local specialties. It tastes great with or without hot chilies. It is colorful! This salad is perfect as a light summer meal or a side dish. Serve it with grilled meats, poultry, seafood, tacos, enchiladas, or corn chips or tortillas.
