    Lisa - TIP!!! I have baked mini sourdough loaves exactly like you did in this video without a dutch oven as well!! For the steam, I used a small ovenproof glass dish, filled it with water, and put it into the oven during preheating, and leaving it in there during the "lid on" baking time!! I use this method ALL the time, works beautifully, and not so much bulk.

    • @shannonleta
      @shannonleta Год назад +8

      I do this all the time. It's a French technique and creates an immense amount of steam! I do it when I make Baguettes mainly but the overall idea is no fail!

    • @shannonleta
      @shannonleta Год назад +5

      I also use my small 8 inch cast iron pan for this instead of glass!

    • @zoecrowhurst9177
      @zoecrowhurst9177 Год назад +2

      Yes! Soooo good! But if you use something other than glass you don't have to worry about shattering in those higher temps!

    Vos vidéos de cuisine sont merveilleuses d'authenticité, et ce que je trouve le plus beau c'est le mouvement de vos mains qui travaillent tous ces ingrédients, ces ustensiles... quelle beauté dans le geste, si assuré, habituel, quotidien, routinier, mais plein d'amour! J'ai toujours trouvé les mains d'une Maman particulièrement belles!

    Soo yummy ! Since at our house we are just two people I was able to pull off making a mini loaf (30g starter, 210g water, 300g bread flour, 4g salt) and then split that into two "mini mini" loaves for the cold proofing. And then I baked both of those in the same big dutch oven for the bread bowls, they were super cozy with broccoli cheddar soup :) if I were to do it again I think I can manage making them even more mini with just 25g starter to start and a proportional share of the other ingredients to make a good size bread bowl but not too much bread for my belly

    I loved your soup bowls! They are actually an historic way of serving in England. The grand folk may have eaten from plates, but most folk ate from a “trenchers” of bread, then eat the bread, L know which I like the thought of most, but I’d still need a plate, would want to leak my soup!

    Even though I personally don't eat meat your cooking videos are still very inspiring to me; it's more about the general idea of combinations than of the literal recipe. What I really appreciate is how you are very committed to quality products, seasonal produce, and cooking as much from scratch as possible, but you're not scared of things that people sometimes get a little too restrictive (imo) about like sugar, salt, carbs in general. I eat differently from you but your view still resonates :) thank you!

    Love that you are eating seasonally. I'm working on incorporating that concept into our dinners. Soups & casseroles, root veggies, cold weather leafy greens, sauerkraut, etc. It's not easy as my family is picky and likes specific veggies, but I'm trying to get creative - ie: I mix turnips with potatoes when baking or sautéing. (I live in TX and am trying to work with produce in my region.)

    Something I learned (from my early days of cooking and not knowing better) is that you absolutely don't have to trim the ends off of Brussel sprouts. They have no odd flavor and cook just as tender as the rest of the vegetable. Less waste, saves money, saves time :)

    For me it's not so much the tupe of finner that I associate with winter, it's more the ptoduce available. Things like brusselsprouts, freshly made sauerkraut, andive. The only really wintery dish here is probably stamppot, a mash of potatoes with vegetables usually served with a protein source like smoked sausage, meatballes, pork belly. I'm really thinking hard if I have some dinners I cook more often or only in winter. Probably soups and some stews.
