Mango Coconut Ice Cream

This light, tropical ice cream is made with blended fresh mango, coconut cream, coconut milk, shredded unsweetened coconut, and macadamia nuts. It is sweetened slightly with Splenda, and I added a touch of Tahitian vanilla. I decided to add a bit of honey after the first spin.
This dessert is not overly sweet and the flavors are subtle. It's perfect for a warm summer day and reminiscent of suntan lotion at the beach.
