Always separate your eggs in s different bowl and once you are sure you didn't lose a drop of yolk( or got a bad egg) add that white to the rest. I learned the hard way -was making a 12 egg omelet and on the 11th egg i cracked and it was bloody. The proteins in the yolk affect how the whites whip. So safer to dirty up a ramikin than to waste a bunch of eggs

It’s wonderful! However I would never do it myself, too much work and time... would rather find someone who can make it for me....
