- Everyone will love this dessert! So light, airy, fruity and delicious, this meringue roulade will be a show stealer. It is actually super easy and quick to make, with only few ingredients it will fly of the table in seconds.
One of my most favourite desserts at all times. It is also gluten free.
RECIPE:
5 egg whites
Pinch of salt
250g icing sugar
1 tbsp cornstarch
300ml whipping cream
1 tbsp sugar
150g strawberries
100g raspberries

I made this recipe this week as a "birthday cake" for my Mum and absolutely EVERYONE in my family said it was the best dessert I've ever made.....and I make a lot of desserts. It's been requested for Christmas instead of my usual pavlova too. And piping the meringue is such a genius way to make this. It makes it so much easier to roll. Thank you so, so much for this. Insanely delicious! But you must eat it right away. I had one piece before putting to the fridge for a couple hours to set and it started leaking and got soggy I am guessing because of strawberries. So make it and enjoy it right away)
Thanks for the tip! Yes, unfortunately it depends on the fridge, in some fridges with more humid air it can be the problem, but not all. It shouldn't be a problem if there is air circulation in the fridge.

Beautiful and you make it look so easy, but you didnt add lemon juice or vinegar. How can I get mine to come out crispy on top like this?
Thank you so much Tahrina 🥰 it is actually very easy, as easy as it looks really 💕 I didn’t add vinegar or lemon, it turns out tenderly crispy 👌 maybe it depends on the oven, I use electric oven, conventional (top and bottom heat) setting 💗

Yes, absolutely👌I use top and bottom heat only as my oven doesn't have a fan.

I tried your recipe, it came out well and tasted soo good except that the outer layer wasn’t crispy. Any idea why?
That's awesome 💗🥰 You could try baking it at slightly higher temperature it also has to be preheated for about 10 minutes before baking. Every oven is different, depending on the type of fuel and temperatures that shown on display are not always accurate, just keep an eye on it during baking process, meringue may be tricky and doesn't always come out perfect the first time, but once you know your oven it will turn out perfect every time 🥰🥰🥰
