A Rare Vegetable Curry

- It was amazing tasting this vegetable for the first time. I am not sure about the correct name but locally it is called Catchu/kochu fuler pakora/Katchu/Katchew/Catchew. It tasted simply delicious.

We ate Katchu regularly because we were quite poor growing up in Tacarigua. Over 60 years ago we picked chorai bhagi and katchu in the bush. On Fridays we had fish and on Sundays we had meat.

I have just written a book called 'The Culinary Heritage of Trinbago - Our Seasonal and Traditional Foods', which is available in all bookstores as well as on Amazon. This book was published just 2 years ago.
I featured Catchu in the book, because I grew up eating Catchu and it was one of our favorite meals.
You wanted to know more about it.
I should tell you Catchu used to come out just when the first rains fell in June. We would get it everywhere there was an open Savannah.
You would see this wild Tania popping up, because the tubers will be in the ground and when the rains came, it sent the shoots out. So by the first or second week in June, Catchu used to be available.
Of course, with so much land being utilized for housing, you don't find too much of it. That's why it is so expensive.
Families would go around on on open trade trucks to collect Catchu and a few green mangoes and then come home to cook it - yes, with hot Sada Roti!
So you got it right, and your Mom did a great job!
You said the flavor is like fish, but we have found it tastes like Curried Shrimp!
I am really happy, because I described all that I just said to you before I wrote the recipe.
I had no photograph to add so people could recognize this vegetable, so I'm so happy that you have photographs of the actual vegetable!
So if somebody would have bought my book, with your information they would know exactly what Catchu is!

It is the unopened flower stalk of a bulbous plant that grew in sugar-cane fields after the cane was cut and trash burnt. If allowed to flower, the tulip-like flower looked like small flames from a distance.
I would like to suggest it belongs to the wild-onion family.
