  • Authentic Iranian Cuisine: Ghormeh Sabzi Recipe Step-by-Step
    Ingredients for making Ghorme Sabzi for 4 people:
    1_ 100 grams of leek
    2_ 100 grams of parsley
    3_ 50 grams of cilantro
    4_ 2 Oman lemons
    5_ 400 grams of lamb meat
    6_ 50 grams of red kidney beans
    7_ Two onions
    8_ Salt and pepper
    9_ 2 tablespoons of lemon juice
    Recipe :
    1_ Wash the herbs and chop them finely.
    2_ Place the herbs in a pan without oil and fry them until completely dry and the water from the herbs is evaporated. Once the water is evaporated, add oil and fry the herbs until slightly darkened.
    3_ Finely chop two onions and fry them in another pan.
    4_ Cut the lamb meat into square pieces.
    5_ Add the chopped meat and fried onions to the fried herbs and fry them together for five minutes with some salt and black pepper.
    6_ Soak the red kidney beans in cold water for 6 hours, then wash them and cook them in water.
    7_ Add the cooked beans to the mixture of herbs and meat. After combining all the ingredients, add boiling water and cook over low heat for 3 to 4 hours until the stew thickens.
    8_ Pierce the Oman lemons with a fork and place them in boiling water for ten minutes to reduce their bitterness.
    9_ In the last half hour of cooking, add the Oman lemons to the stew pot and add three tablespoons of lemon juice to it.
    10_ After half an hour, your stew is ready to serve. You can enjoy it with rice.
