    What grill are you using wood chips on?

      22 inch Weber Kettle. Using hickory, mostly, with a little mesquite on a pork butt. I tend to use chips directly on the kettle because they catch fire quickly and burn down, avoiding puffy white smoke as much as possible. I tend to use the foil method on shorter cooks.

    So I was a gm at a bbq place in Atlanta and used the southern pride 750 smoker which is amazing, now I m tryin to understand smokin on a gas grill. Are wood chips not as good an option as the pellets? I bought a small smoker box and fell like dry wood chips burn up pretty quick even on a low heat with indirect heat on the grass grill

      Hey Josh, wood chips in a smoker box should last between 30 minutes to 45 minutes. If they are burning too quickly, try moving them to indirect heat once they are smoking to prolong the smoke.
