Cherry and Peach combo is a fantastic blend for anything pork and yes poultry! And White Oak for beef all the way! Has that great oaky flavor with a beautiful hint of vanilla!
I'm in Ecuador and surrounded by acacia trees, from what I read, acacia and mesquite are very similar. My friend in Tulsa said he's seen young, bougie smokers at competitions using it, but it is pretty expensive. Have you had a chance to use it? We're also surrounded by lime, lemon, and mango trees.... with all of which I'd like to experiment as well. Also, what's your opinion of leaving bark on?
I see Peach wood for the sweet flavor. Interesting to see Cherry and Pecan. I learned Mesquite the hard way. I bought a 40 lb bag of lump and spatchcocked a chicken. Even a quick steak was more than I was wanting. I cook on a Kamodo and have found B&B Oak lump to be a personal favorite now. Even with pizza I can taste a little smoke and it’s good flavor. Excellent video right to the point.

There are no wood chips that will make barbecue taste like charcoal. However, all of our wood chips used in a smoker box will impart a smoked flavor to what you're grilling.

Mild to Medium in my opinion. Goes lovely with pork & chicken. Not my favorite for red meat but not bad by any means. It’s a bright, sweet smoke

Texas here, Mesquite is everywhere too and it's what I use the most. Pecan is a nice alternative for a lighter flavor
