- It's a Greek eggplant salad, a little different from the one made in Romania, it has a few extra ingredients and it's delicious!
Ingredients:
4-5 ripe eggplants
4-5 fleshier red capsicums, ripe
1 medium onion
2-3 cloves of freshly crushed garlic or 1 teaspoon of garlic powder
juice from half a lemon or to taste
salt, vegetable without monoglutamate, to taste
50 ml of cold-pressed olive oil
1 bunch of fresh green parsley
