    you cut it wrong cut with the grain to make the steaks, so you can cut against with knife and fork. Your judgement is wrong sir, go watch Guga

      When butchering a sirloin cap, you are correct. Cut with the grain to make steaks. This was a whole roast, so this was cut 100% correct.
