A Very Underrated BBQ Option: Smoked Shredded Beef! | Using Chuck Roast
Smoked Shredded Beef- not usually what comes to mind when deciding what to BBQ. But smoked shredded beef is a delicious and cheap, simple, relatively quick cook with minimal prep.
The gist of this video- grab yourself a chuck roast or two, and season with whatever you want. I used olive oil as a binder and seasoned with just salt and 16 mesh black pepper. I then smoked my chuck roasts at 250° on my @PatriotPits Freedom 120 for about 5 hours. They were each above 160° internal with decent bark, so I then braised them in beef broth in foil pans until they hit 200°. I rested each roast for 30 mins, then shredded by hand.

    As soon as you said the small one shredded so easily I thought oh no what happened to the larger one. It's maddening when you throw everything at a piece of meat and it doesn't shred or probe easily. Great job as always!

      This time, I had a pre packaged brine and used the ratio on the packet! I usually just google based on how much water I’m using. Next time I do turkey or chicken I’ll include the brine and do my own!

    Hi -- can you tell me more about what you described as the "Chud Hack" near end of video, made with apple cider vinegar and hot sauce? What sort of ratio did you you of those ingredients? What brands of each? Any other ingredients? I definitely think that adding that to the pulled pork would help keep it most and flavorful, though I have not tried this yet.

    I HAVE BEEN DOING THIS KIND OF THINGS FOR AT A DECADE. YOU TO HAVE TO LET IT SIT ON WATER OVER NIGHT TO LET SOME THE SALT OUT. THE SEASONING PROFILE NEEDS TO HAVE COLANDER. I'M FROM NYC AND KNOW WHAT PASTRAMI SHOULD TASTE LIKE.

    Can you help me? Pulled mine off at 6pm. Party starts at 4pm tomorrow. Best way to keep them? Cool and reheat or keep them in oven like you posted for 12 hrs. Theyre double wrapped in a yeti cooler right now. Still too hot to touch. Its 10pm. Please help! I dont want to do the wrong thing and have cooked 8 butts.

      Hi- that’s quite a bit early 😂. If I were you, I’d take them out of that yeti, let them come down in temp to 160 (which might take a while). Then pop them in the oven at the lowest setting for 12 hours. When you hit your 12, shut the oven off and keep them in there. Probe them periodically when oven is off and make sure they don’t get below 140 before serving. Definitely try to keep foil pans beneath them because pork butts will find a way to Leak juice in your oven even when double wrapped. you don’t want to wake up to your smoke detector in the middle of the night ! Good luck keep me posted

    Loving that smoker. I smoke more in winter than in summer. The summer heat in east Oklahoma is way worse than anything else and the humidity and bugs are miserable. I have no problems being out at 20 degrees, but others can have those 105-degree days. We celebrate the 4th with a cookout in January.

    Glad I found your informative video. Cooked my first pork butt in my Kamado Joe Classic III. Tried resting at 170° in the oven for 10 hours to serve at lunch. Turned out great. Family enjoyed it. Thanks for the guidance.
