May I ask why you choose to sometimes use egg whites on certain recipes but baking soda in others? Are these 2 interchangeable in terms of tenderizing the beef?

If you can't find the facing heaven pickled chilis could you use another type of pickled chili like pickled banana peppers, pepperoncinis or pickled cherry peppers or is the flavor very different? If anyone knows I would appreciate your advice. Thanks
You can use other types of pickled chili. The flavor will be a little different but it shouldn't be a big change. You also want to adjust the sodium amount in this recipes because different jar of pickled chili usually contains different amount of salt. You can also use your favorite chili sauce instead.
Tried your trick of adding a little baking soda to the marinade. Didn’t have cumin, but plenty of basil from the garden. Left out the egg white because I didn’t want a crust with the basil. Super tasty and unbelievably tender for the tough cut of meat I used. Even better the next day. Shared a little piece with my dog. Not fair to torture them with such good meat smells. LOL! If the pepper you are talking about is not hot, they are definitely not the same type. The pepper I use, a small piece will set your mouth on fire. The name is Cao Tian Jiao [朝天椒] in Chinese. Totally ruined it by using London Broil beef... drats! Even using baking soda plus at least 8 minutes of velveting, it was leather. Cross-cut, cooked right... that cut should be outlawed! Will try again... later.
The pan I am using is a well-seasoned carbon steel frying pan. The layer that is coming off is just a nature coating from the daily cooking. It is totally fine.
This needs an update. One of your best. I love it.

Yes, if you use cumin seed then you can add it in when you add those onions. You can fry cumin powder, it will turn black and change the flavor.
