Today we are making a well-known American Chinese food - orange chicken. It is not traditional, but the technique of making fried chicken and coat it with a sweet and sour sauce is commonly used in many many Chinese recipes such as sweet and sour pork, fish, shrimp, and tofu. In this video, I am going to show you how to achieve that crispy outside, tender inside consistency, and a perfectly balanced sweet and sour sauce so you can make sweet and sour anything.

INGREDIENTS
- 300 grams of chicken breast, slice it into 1/4 of an inch pieces
- 1/2 tsp of salt
- Black pepper to taste
- 2 tbsp of orange juice
- 100 grams of cornstarch
- 2 medium size eggs
- Enough frying oil
- 2 tsp of cooking oil
- 1 tsp of ginger
- 1 tbsp of garlic
- Few shakes of red pepper flake [Amazon Link: geni.us/WKwGJC]
- 1/4 cup of Orange juice
- 3.5 tbsp of light soy sauce [Amazon Link: geni.us/MGHf]
- 1/4 cup of brown sugar [Amazon Link: geni.us/yYRF]
- 1 tbsp of honey for the taste [Amazon Link: geni.us/YIeL]
- 1.5 tsp of orange zest
- 3 tbsp of vinegar
- Cornstarch water(1.5 tbsp of water + 1 tbsp and 1 tsp of cornstarch)
- Some diced scallion and red pepper flake for garnish
INSTRUCTION
- Cut the chicken breast in half. Angle your knife to 45 degrees and slice the chicken into 1/4 of an inch thick pieces. Marinade it with 1/2 tsp of salt, a little bit black pepper to taste, and 2 tbsp of freshly squeezed orange juice. The acid in the fruit can tenderize the meat and this amount of liquid will keep the chicken moist. Just mix everything until the chicken absorbed all the liquid. Cover it and Let it sit in the fridge for at least 30 minutes.
- Next, let’s make a batter. Crack 2 eggs, beat them well. Mix it with 100 grams of cornstarch. Use a fork stir it continually. The cornstarch might clump up at the beginning. Just keep mixing it and you will get a really smooth, shiny looking batter.
- Coat the chicken with the batter.
- Heat the oil to 360 degrees F. If you don’t have a thermometer, you can test it by dropping a little bit batter. If you see it bubbles a lot and floats to the top, that means you are good to go. Fry the chicken for 3-5 minutes or until the surface is getting hard. Doesn’t need to be golden brown. Take out the chicken and let it rest for 10 minutes and we gonna double fry it.
- This time, heat the oil to 390 degrees F. You can add all the chicken in once because they will not stick to each other anymore. Double frying is the key to make sure all your chicken pieces come out crispy. Keep stirring until you get a light golden color.
- Set it aside and we will make the sauce. Heat up your wok. Add a little bit oil, some minced ginger, garlic, and few shakes of chili powder. Stir until fragrant then pour in 1/4 cup of orange juice, 3.5 tbsp of light soy sauce, 1/4 cup of brown sugar and 1.5 tsp of orange zest. Stir to melt the sugar. I like to add 1 tbsp of honey, just for the honey flavor, it is optional and also depends on your taste. Then pour in 3 tbsp of white vinegar. The reason we add it now is that we can drop down the temperature of the liquid and you can add in the cornstarch water. If you add it while the liquid is boiling hot, it will clump up easily. Keep cooking it on medium-low heat. Make sure you taste the sauce to find a perfect balance between the sweetness, sourness, and saltiness. I made this many times and I know this is perfect for me. In about 2 minutes you should reach a consistency that is a bit thicker than syrup texture. If the sauce is too thin, the chicken will lose the crunchiness when you mix everything.
- Turn off the heat and dump all the chicken in. Quickly stir and make sure all the pieces are coated well. Take them out. Top some green onion, few shakes of red chili powder and you can serve. - Хобби
The orange I used in this video (1:26) looks green but it is TRULY AN ORANGE, A SWEET ONE. When I make this video, I was in Ecuador. Green skin orange is normal in Ecuador. A lot of people ask me if they can use lime or lemon in this recipe since the orange is green? The answer is yes but you will have to adjust the sugar amount so it fits your taste.

@@Tooroontoo I actually ended up agreeing with them, I was surprised because I still don’t think the recipe has a lot of orange in it and I have such a bad sweet tooth, but it was way too sweet for me and the orange was overpowering in a way I didn’t enjoy. Which I also don’t get because I love oranges. I think if I make this again, I’ll cut back on some of the orange or sugar. Thank you for getting back to me though!

I’m sure it would still taste good with it though, what is bbq, just ketchup vinegar molasses and that one has honey, none of that sounds too bad in addition of this recipe but it might change it up too much lol
Tried making it yesterday and cause I'm still an amateur I messed up a few things, like not heating the oil up to the right temp and frying the coating too hard or slightly burning the garlic, yet despite these flaws the food tasted amazing! I paired the chicken with stir-fried noodles instead of rice, and since I had a bit of leftover sauce I added it to the noodles as well. Was fantastic! Thank you for this recipe :)

We tried making this tonight for my birthday and it was PERFECT!!! The chicken inside was so soft while the outside breading had such a great light crunch. The balance of the flavors was just right. If you follow the recipe like she says, it tastes just like ORANGE CHICKEN FROM PANDA EXPRESS! It’s superrrrr delicious. I made it about a week ago and I was shocked because it tasted just like Panda Express. However tonight I tried making it again but I was missing some corn starch so I had to substitute with flour and it no longer tastes just as good, the crunch is missing! SOOOOO if you’re gonna make this...make it exactly how she says! You won’t regret it. I will keep using this recipe for anytime I’m craving panda express orange chicken.

I made this without a lot of expectations because recipes generally don’t turn out as well as you think they will, even the seemingly easy ones, and I’d tried one other orange chicken recipe without success. Honestly, I was so shocked at how authentic and good it looked that I immediately took a picture of it when I’d plated it. It was perfectly cooked though I have to say my version was a little too salty because I used regular soy sauce instead of light. I tried to adjust it by only adding 2.5 TB of regular soy sauce, but it was still on the salty side. Even so, the family enjoyed it, and I was overjoyed. Will make it again either with the light soy sauce or with a smaller amount of the regular one. I highly recommend this recipe. I actually made mine without the orange zest and, not realizing you needed a whole orange eventually, we ate the remaining half of the orange after using the first half for the marinade 😅. I didn’t have another one in the fridge, so I used some old tangerines for the sauce portion, and it still turned out just fine. Thank you. I’m always encouraged when something goes right.
Thanks for telling us about the Light Soy Sauce. I made a note in my wife's recipe that she is planning to cook.
If you're using regular soy sauce (neither the low sodium or the light) don't add salt. At least that's how I adjust it. You can also add water to your soy if you need more liquid.

I made this chicken for the second time. And I have to admit, this is the best recipe to use. Very simple yet the results are terrific. The orange zest and fresh juice really make a difference.
