I love m&m cookies. I do them for my coworkers for each holiday season of the year. Easter, thanksgiving/halloween, christmas. I usually give a good dash or two of cinnamon because it brings out that chocolate flavor. (It makes me think of hot chocolate in Mexico City.) As for other cookie ideas, please, please a nice shortbread tea cake / Shrewsbury tea cake

(This is basically a cookie filled with an almond-lemon paste) - stroopwafel (this is 2 waffel like cookies with a sugar syrup. Idk what the english translation exactly would be) - boterkoek (this is famous for being very buttery, hence why butter is literally in its name. Usually if you bake it, it would be in a pie like form though, or a large rectangle you cut into smaller ones) And since its kinda in the season: pepernoten, gevulde speculaas, speculaas brok. All 3 of these are associated with the dutch holiday "Sinterklaas", based around the holy man, st nicolas. They all follow the theme of using speculaas spices. (Which is a mixture of Cinnamon, nutmeg, ginger, bay leave, cardemom and white pepper) That was a lot more writing than i intended to do😅

When I make chocolate chip cookies I usually freeze left over cookie dough already formed in a ball to pop in the oven when I am craving them. Am I able to do the same with this recipe? Or is it no more than 10 mins in the fridge versus freezer?
Please make Lemon Ricotta cookies, they're sold at Central Market during the summer and they are so delicious!! There's some kind of sugar costed frosting that's lemony as well. Crazy good!! And expensive.
In which situations are silpats better than parchment paper? I don’t love the shiny bottoms you get from using silpats, so I think I would always use parchment paper if single use things didn’t make me feel guilty.
Love all your videos and started making some of your recipes with my son who loves watching as well! Would be amazing if you made a recipe for marranitos (can be called a cookie right?!). That was my favorite pan dulce growing up but can never find a good soft chewy version especially since I moved to Maryland from the west, just no good panaderias out here, haha

You can use chia seeds mixed in water for an egg substitute. Keep in mind that butter is not plant based.
