Your point about the Sphinx fight is an skill issue, if you payed attention to the murals near that portrait the Sphinx you will be clue in that attacking her face and chest area will instantly make her flee and despawn until NG+ and to fight her (Which you will end up doing anyways after finishing her whole questline) you will have an easier time soloing here with a vocation that lacks huge AoE attacks and wide swings
I'm just not a fan of her questline. I think making her a boss you can encounter in the wild, like Griffins and Ogres, would help with the enemy variety.
