- Fellow vegan bakers, this is a vegan sandwich loaf that will not disappoint you. Despite no egg, no butter, the loaf taste so fluffy soft! Give it a try and leave me a comment on your feedback!

Ingredients (sweet stiff starter)
60g starter
180g high protein flour
80g water
30g sugar
Ingredients (dough)
350g high protein flour
110g wholemeal flour
40g sugar
8g salt
330g plant milk
30g olive oil
All the sweet stiff starter

the sugar in sss is to create osmotic stress and suppress the LAB in order to reduce or eliminate sourness. If you do not kind of the sourness you can omit the sugar in sss

not really, probably half of an oven price

@@autumn.kitchen 我剛試了但失敗了。麵糰放進烤模後就沒有怎麼再發酵澎脹了,我把它放在攝氏27度的室溫超過10小時,麵糰也沒有再升起,不知道是什麼原因。看到自己浪費了食材,很沮喪。😔

For sweet dough (soft bread), I use Pansyokunin (Japanese high protein flour, 12%)
more people need to be vegan it would the best decision they would take

Is it ok if i use a bigger pullman more hight will it still reach 90-80% of it?
Dough may not fill up the pan if it’s much bigger

Hi there is no egg wash for this bread. Snipping the dough just for asthetic, you can skip it without any issue 😉😊

You can mix in the oil bits by bits. If oil added too early it affects the dough gluten forming

Hi Autumn Kitchen I tried the recipe yesterday & it turn out nice & soft. Only thing it tasted a bit sour. I used soy milk & rye flour
Wholegrain flour (rye, spelt, whole-wheat etc) usually will be more sour than white flour

May I know can I use honey or coconut sugar to replace white sugar for health reason? Any specific adjustment for this change? Thanks very much!
Honey try with 30g. I have not tried coconut sugar though but I guess should be alright. Try with same amount.

Thank you for sharing I had made the sweet stiff starter before but it never got on, I did not attempt to make for awhile, except regular loaves and sourdough loaves. This time it rose and when stretched like spider webs.. so happy. Thank you. 🙏🏼🙏🏼🙏🏼

I usually feed 1:1:1 a few rounds for my liquid starter. When it is strong and active then only use it to build sweet stiff starter. Yes using hand is possible but more challenging

Thanks for trying. Sourness is very much rely on the starter. Stronger starter has lesser sourness. Try to maintain a very active and strong starter, it helps to reduce sourness
