- Matcha and black sesame is a classic and delicious combo used in baking. The earthy flavor of matcha works well with the roasted nuttiness of black sesame. They are just a perfect pair in bread and looks absolutely gorgeous in babka! The beautifulness of this babka rely on the fresh green color from the matcha. To retain the the green from the matcha, check out the tips in my video.

Ingredients (Sweet Stiff Starter)
60g sourdough starter
180g high protein flour
80g water
30g sugar
Ingredients (Dough)
460g high protein flour
40g sugar
8g salt
225g milk
2 whole egg (110g)
40g unsalted butter
All of the sweet stiff starter
14g matcha powder
30g water
Ingredients (Black Sesame Paste)
150g black sesame powder
35g soften butter
50g milk
30g sugar

Do you use top & bottom oven setting? Will the proofing time be shorter for instant yeast?
Yes just top and bottom heat. Definitely faster with instant yeast

老師:請教個問題我的天然酵種在餵養2次後都只漲高約0.8不到1倍,如此這酵種是不是不能用了,但裡面又有氣泡好像還活著,就是無法漲到3倍,是否要把比例調高為1:2:2,前2次都用比例1:1:1餵養,另外,酵種長高的時間越久(約要6-7小時)做出來的麵包是否酸味會越重,不好意思我遇到好多問題希望老師能幫幫我,謝謝您.

Thanks a lot for the recipe. It is great as always. Did you use your Lievito madre starter or regular one? Lievito madre has the ability to leaven egg and dairy-enriched dough.
I use the sweet stiff starter which was build from liquid starter. Livieto madre need few refreshes to make it strong before using, while my liquid starter is kinda ever ready 😄

Took more than 12 hours for the sweet starter to not even double at 28C, is this normal?
Very likely your starter is not strong to start with. For sweet starter you need strong and active liquid starter to build on. Try to strengthen your liquid starter 😊
