If you add Greek Yogurt it makes it way fluffier and you can use less water. It's one of the reasons Greg is able to put it over his head in thumbnails.
I don’t notice any issues with xanthan gum and stomach stuff, but I’d use even less than what you recommend because that much will give anything the mouthfeel of snot. Or some other bodily fluid. I was never that fond of that texture, but no judgement if that appeals to you. To each his own. But xanthan gum is fantastic as long as you’re aware of how it can get that way when you use too much. You’d be surprised what you can get from just a pinch of it. Another issue is that it can glom together if you’re not careful as soon as you introduce moisture, resisting dispersal into whatever you’re making. Like slimy globs of snot. So one tip is to mix it into your dry ingredients first in order to distribute the powder before it can cling together into its little booger snot globs. Most people aren’t keen on that mouthfeel, and will be grossed out by it, even if that’s your thing.

Instead of Xantham gum there is this product in the baking aisle that is made by Kraft.it’s called Minute Tapioca. My mom taught me to use this as thickener. I think other people might use it to make tapioca pudding. I just made protein ice. Ream with it. It works! I grabbed the tiniest measuring spoon I could find. Are you familiar with those measuring spoons that jokingly say “ pinch”? I found the smallest of these. I could almost count the tapioca balls. It’s in a skinny and small red box with white tapioca pudding featured on the front. Yes, it’s a carb but I needed so little I bet I did not even use one carbs worth. I made about 1 1/2 cups of ice cream. I used lots of ice, about two scoops of O.N. Whey protein, the pinch of tapioca and a few splashes of unsweetened almond milk. It was excellent. The only thing that makes me nervous is that my whey protein has Spenda type stuff in it ….sucralose…..and the WHO (world health org) recently named this as a likely carcinogen, something about getting into cells and breaking up the DNA. If you want to make a video, use your protein but try this tapioca as the thickener.

This looks awesome. Milk or other liquid first, then powders and fruit, then ice, is generally the way vitamix says to layer it to put the least strain on machine and have it blend most effectively. Probably doesn’t matter when you’ve got a super high power blender, but I tend to follow it anyway

So I just did this. Not 100% the same as you but used PB powder, Cacoa Hershey's, 10gs vanilla Whey protein powder, about 1/2 tsp Xanthum gum, 32 ice cubes, frozen banana, low fat greek yoghurt, sweetener and just under 1tsp vanilla extract. Didn't get the big volume that you did (when I have in the past it's been too fluffy/frothy due to Xanthum gum doing much of the word), but it was rather firm but obvious that it needed to go into the freezer as it still was a bit wet and already melting. I'm still trying to figure out how to get the firmness not fluffiness but also have the volume that you got. I have a Ninja but used the round bowl to do the ice cream, not the taller but thinner one that you did. Previously when I have used that taller one I have gotten more volume though, so wonder if that may be one of the aspects that's not letting me get the big quantity of ice cream. Otherwise I'm not sure why I'm not getting the big volume the same as you on this. I've tried ice creams along the lines of using the same ingredients as you but have only got close to big volume/good firmness (no fluff) but still not nailed that perfect combination yet.
GUYS in Europe we got serious issues getting Jell-O so what could be an alternative or can you just make the ice cream without it getting nearly the same result? Xanthan gum is doing the job right...maybe a bit more of the xanthan gum and we are good to go?!
Greg uses Jell-O pudding in his recipes so I wanted to try it and I ordered some from UK (before Brexit ;) ). Basically the main ingredient is just modified cornstarch so you can use an equal quantity of cornstarch and whatever aroma you want to use. Simple as that :)
In Germany it's called Pudding, it's basically pudding powder sold in bags with 5 packs in it. One bag costs 39 cents. Every grocery store has them. Usually vanilla flavor.
Pro tip: if you are super worried about calories just do protein powder, ice, gum. Imo alot of these recipes the cocoa powders and nut milk doesn't make it taste enough better than an extra 100 grams of carbs at dinner or some cheese In my scambled eggs

I tried this twice. 2nd time came out a little better because I measured the ice on the scale, but its definitely not as smooth as yours. Not sure if I should use Whey instead of Casein.

You don’t NEED the protein powder! It just won’t have as much protein in it. Add more cocoa powder, jello mix, pb2 instead. Or one of those more than the other. Whatever fits your taste buds!
For Diabetics and Keto folks, swap that protein powder with Keto Mealshake and skip the pudding and add vanilla. and take that down to a single digit carb count. remember your brain is made of lipids. Probably not without adding some fat into it, like cream or yogurt. I tried something similar way back, it also didn't freeze well.

I tried this twice. 2nd time came out a little better because I measured the ice on the scale, but its definitely not as smooth as yours. Not sure if I should use Whey instead of Casein.
There's already xantham gum in the jello. Wouldn't adding more seem a bit excessive?
I added only 1/8 tsp of xanthan gum and holy cow, it jacked me up! 😳

You don’t NEED the protein powder! It just won’t have as much protein in it. Add more cocoa powder, jello mix, pb2 instead. Or one of those more than the other. Whatever fits your taste buds!

We don't have vanilla sugar free jelly here in Ireland, just strawberry and raspberry. Can I use those? I could leave out the cocoa and just make a strawberry ice cream?
