BEST Way To Freeze Walleye, Fillet & Freeze

  • Vacuum sealing machines and bags are an expensive option for storing your walleye fillets in the freezer. I truly believe the way I store my walleye is the absolutely best way to preserve your fillets so they will taste just as fresh as when you put them in the freezer. You don’t need any expensive vacuum sealing machine and bags. All you need is a clear ziplock bag and a sink! This method will save you $ and won’t breakdown. Here in Ontario, there are specific rules you must follow to make sure you are not breaking any conservation laws. This method of freezing fillets meets all the criteria laid out in the fishing regulations. I will show you how I clean my walleye with an electric knife so that the fillets are clearly identifiable and countable so that all regulations requirements are met.     Great tips as always Steve. My suggestion I would give you and your followers is I go a little further down the skin then back the knife up about an inch and cut skin. This leaves a nice tag end to grab to cut off or just pull off for cooking. I have used the food saver for longer term freezing but like your method. I Wouldn’t have to haul it on trips and the extra ice around it would probably help keep it frozen on trip home.

    I have froze my fish this way for many years and found it keeps the fish in better shape than vacuum sealing. It works excellent and you can store fish much longer than any other method I have tried. It even works well with cheap/thinner bags. I do it a little differently (easier IMO). I just fill it nearly full with water from the tap. Sit it down in the sink. Seal 95% of the zipper and then squeeze out the water to were you need it and finish zipping it closed. You get a feel for the right amount of water to squeeze out after a few tries. I don't need my fish to lay perfectly for identification though because our law does not require it so I do not worry about if they are perfectly aligned in the bag.

      When this tip was passed on to me, it was greatly appreciated as it does a great job preserving fish and is quicker to thaw out as it uses less water.

    How long have you let them be frozen until you eat them.

      I have frozen fish this way and kept it well over a year and it tastes great. I always get it on ice and fillet asap. The fresher and quicker it goes in the freezer the better! Obviously try to use it up within a reasonable time frame. When you thaw it, you’ll be surprised at how fresh it smells and tastes.
