So, firstly being ranged is better to clear wards. Kalista is a nice supp because of w vision and ult disengage for varus (who has his own peel with ult). Ashe is also a very good supp because of e vision, w poke and peel, and ult engage. Thats the main reasons.

can someone tell me why both teams decided to go with 2 adc's bottom? why not choose support?

May be they just want to poke and annoy, it depends
Range champion are good but I don't think it will last in teamfights
ashe and varus can actually work decently okay as supp due to their slow varied cc abilities. I'd say more ashe than varus though
