    I've just done my very first green beans -- half plain and half with a little salt. Afterwards, I'm calling it an experiment to see what we like best, except -- of course -- it will almost certainly be the ones with salt. I just simply forgot. But I got the canning right. All good seals. Maybe my next "experiment" will be half Whippoorwill Holler's style in chicken broth and half your style here with these lovely sounding extras. Thank you for the demo and all the little reminders as you go.

    Great recipe! I was very hesitant about canning green beans but you and Ms Lori at Whipoorwill Holler convinced me! Thanks so much. It's nice to have a vegetable side dish you can just open up a can and heat!

    Hello Vickie...so glad your garden is so productive...mine not so well...amazing what weather can do! We are having fires in Oregon and smoke coming into Washington...enough to make you choke! I thought of you when you had fires there...hopefully we won't have to evacuate! Your green beans look wonderful...I could almost taste them! I so look forward to more of your cooking and canning videos...thank you!

      Deborah Catania thank you, but I am so sorry that you are going through that! Fires are so hard because they can turn so quickly (so can hurricanes and tornadoes - been there done that), but the fires don't just move on. They can last for a long time! I will be praying for you!

      Vickie's Country Home do you know about how many pounds that was in the canning session? I'm trying to get some from Azure Standard. I never weigh my stuff but they sell them in 2# pkgs. and I want at least enough to make 12 pints to see if we like this recipe.

    • @VickiesCountryHome
      @VickiesCountryHome  7 лет назад

      Stephanie Nuce the Ball book says that 2 lbs make 4 pints or 2 quarts. I would say that is about right. I did scale the recipe up.

    Your Cerius plant looks so cool! I had never heard of that kind of plant before. I had a BeeBalm plant that was my pride and joy, but lost it this past winter. Hopefully I can plant anothet one next Spring. Lemon garlic green beans sound delicious. I'm going to can green beans this weekend so I'm going to try your recipe. You make the best videos Vickie because your tutorials are very easy to understand. Thanks!!

      Shesacamper 1 thank you! I had never heard of it until my mother in Texas gave me a piece to plant. Of course it is much warmer and more humid in San Antonio than it is in Nevada! I think that you will love the green beans! It gives such a depth of flavor, along with a little brightness from the lemon. It will even be good in soups. We love it!

    Do the vegetables get very soft after pressure canning? I like my veggies to have a slight crunch in them. Not fond of mushy veggies at all.

    I would love more info on your NBC and how you grow it. My poor pot-bound Cerius had excellent growth when we were in the south. But it's not so crazy about being in MN. Bloomed last summer for the first time in 18 years, and I was up all night taking pics of it. Subscribing, because you've got some interesting things going on. :-)

    • @VickiesCountryHome
      @VickiesCountryHome  7 лет назад +1

      Thank you! Honestly I stuck the single leaf in potting soil, and for about 5 years nothing much happened. A few leafs grew, but not much. Then this year... Suddenly a lot of new leaves, a lot of growth outward, and then about 1 - 2 weeks ago I was walking by and there was this funny, fuzzy kind of thing hanging down. I watched for a few days and realized that it was a bud. It was less than 2 weeks later (I watched it carefully) that I knew it was about to bloom, and fortunately I saw it! We are in the high desert, so it amazes me when tropical plants do well here. I have a Plumeria tree that is about 4 - 5 feet tall nearby. I started it from one of those sticks from Hawaii about 10 years ago. Now it is tall and has 3 branches. It hasn't bloomed yet though. I have a Phaelenopsis orchid nearby that has now formed 2 keikis (baby orchid plants) on the stems. I also have Turmeric started in a pot. We'll see how that goes. The only thing that I can think of is that they are near my kitchen, and with all of the cooking and canning they get a lot of humidity!

    • @tinyacres2827
      @tinyacres2827 7 лет назад +2

      You're blessed with a green thumb! I hope you'll do some vids on the turmeric if it grows. Yesterday I noticed turmeric root in the veg section at the store and wondered if I could plant that, lol! The NBC is a very hardy plant. I don't think you can kill them, and the flowers are so special. I'm going to try these beans this weekend. Sounds like an interesting recipe!

    • @VickiesCountryHome
      @VickiesCountryHome  7 лет назад +1

      Tiny Acres nope. Mostly my thumbs are just dirty 😁. I think that the key this year is time spent in the garden, and also keeping the critters out. I think that the tropical plants inside is because with all of my cooking and canning, my kitchen keeps it nice and humid! And yes, I bought organic turmeric from the grocery store. I looked for the roots/rhizomes that had the most buds/eyes on them, and looked nice and plump. I planted them just under the soil, watered and waited. I think it took 5 - 6 weeks (I read that they would take that long) and then I noticed growth. We will see how it turns out!

    Hi even though I’m not commenting in the same year you showed this video , I’m gona try this with the green beans I’m growing in big plastic tubs. I canned green beans last year with the garlic but I’m gona add the other items you did. I did buy this new ball book and I’ll be looking in there more seriously to find good recipes that appeal to me, that’s the thing there are a lot of recipes out there that are very tasty but if you don’t care for it why can that recipe? I will certainly can this recipe in my Prestos, I have 2-21 qts each thank you so much for this video

    hi vickie..these beans sound soo tasty!!
    re the tattler lids?..do they still go ‘pop’ when they do seal?
    ps. that flower was gorgeous...i have a night glowering cactus that has very similar blooms, without the fragrance though. xx

    • @VickiesCountryHome
      @VickiesCountryHome  6 лет назад +2

      Yes, those were tattler lids, and they do not pop. When you take them out of the canner they are usually domed up. Within a short time they cave downward, and it usually means a good seal, although I always test them when they are cool enough just like a regular lid. I haven't had any problems using them. That night blooming cerius is beautiful, and the smell was amazing! The only downside is that it blooms once, during the night, then fades the next morning. I knew it was close, so I was watching for it!!

    Could I used lemon balm instead of zest if I'm using lemon juice from the jar?

  • @MsSmokeybear1

    Got to do these for sure. Can the broth from heating the beans be used for other things as well? seems a shame to just discard it

    • @VickiesCountryHome
      @VickiesCountryHome  7 лет назад

      MsSmokeybear1 you could probably freeze it and use in soups or recipes calling for chicken broth, especially veggie type soups. I hadn't thought of that. I will have to try it now 😊

    Hi, I wanted to know how you can tell if a Tatler lid has sealed.

    • @VickiesCountryHome
      @VickiesCountryHome  5 лет назад

      Hi Sarah, when you take the jars out of the canner, immediately tighten the bands on Tattler lids. Then leave them to sit, undisturbed for minimum 12 hours (or longer). Check to see if the Tattler lid is concave (pressed down). Then carefully remove the band. At this point I like to clean the jar. Then I try to pick the jar up slightly by holding onto the edges of the Tattler lid. If it is not sealed, the lid will lift off. If it holds, it is sealed.
