      I just tried it and its a no for me. Some of it got crunchy and the rest was sticky and it was a mess. I might not have used enough ice cream, but it wasn't for me. 😂

      Doesn't seem that different than eating mochi ice cream. Strawberry, green tea, banana mochi ice cream....I love the fruit candy taste around the creamy center. This is like a budget version of mochi ice cream.

    For the peach ring marshmallows, try adding a little bit of boiling water a little at a time to thin it out. When you make marshmallow you need equal parts water to sugar, but with gummies you don’t use as much water in my experience

    The coke thing. Now I can't say about other restaurants, but my mom had a cafe in the early 2000s and the syrup came in STAINLESS STEEL BOTTLES. The flavor difference comes by HOW STRONG you make it in comparison to the carbonated water and even by how much carbonation you add.

      Most places use what’s called a bag in a box. It’s a plastic bag full of syrup inside a cardboard box. And what the syrup is delivered in can affect the taste (similar to how you can tell a difference between cans, plastic bottles, and glass bottles of the same drink). But you’re also right that the biggest difference between fountains usually comes down to their mix settings and the taste/quality of their water.

      Yes, I used to manage a McDonald's back in the day and they received their soda as the bag in the box like the Arby's and Wendy's I'd worked at before. it's all in the mix of the carbonated water and how much carbonation is added. That's why her "flat Coke" didn't taste as good. Not enough carbonation.

    Caramelizing white chocolate in the oven is absolutely a thing, I do it often. In my experience the texture does depend a lot on the brand of chocolate, but it does usually become gritty, but I don't just eat it as it is, I use it to make caramel ganache or mousse. It tastes amazing and very much like caramel, and where I live it's much cheaper than buying caramelized white chocolate.

      @@TheIcingArtist I sometimes use Weinrichs, a German brand or Odense a danish brand. Bake it in the oven at 120°C for about 30min. "stirring" every 10min. When I make ganache and mix it with the hot cream I usually have to use a stick blender (is that the right word in English 🤔) to get all the little grains out. (I always blend my ganache to make the texture ekstra nice 😉)
      And making marshmallows is very easy, fun and very very sticky 😆. You just heat suger, water (or fruit puree) to I think 115°C take it of the heat, add a lot of gelatine (I can't remember the exact measurements 😉) and then whip it up using a stand mixer. And then with great difficulty put it in a baking tray lined with backing paper and dusted with icing sugar, and let it sit over night. When they are cut it's a good idea to fold them in more icing sugar so they don't stick together. You will make a sticky mess, but it's all worth it 😁

      I second this!! If you buy good quality white chocolate it tastes amazing! Cupcake Jemma hooked me on to it. I usually do it with her microwave method because for me it’s easier, but it is truly amazing.

      @@BellsBotelho Me too. Cupcake Jemma is to blame for this one 🤣I find that although doing it in the microwave seems to slightly more effort because you have to check stir more frequently it is definitely easier. It tastes so good when it is done too

      I've caramelised white chocolate too and it's phenomenal! You need good quality white chocolate at least 30% cocoa solids, which can be hard to find. I use Equagold as it's all I can get where I am. I've found the oven better than the microwave. The chocolate will go through a seized stage but keep going, it will melt and become smooth again. Laurie, yours looked like it needed a few more minutes to fully melt. Oven temperature is important because you don't want it to burn before it melts fully back.

    I’ve done the white chocolate in the oven and it has worked for me in the past. It turns out so smooth and definitely changes the flavor a bit. I’ve made birthday cake cookies where I do part white chocolate chips and part caramelized white chocolate and they are amazing.

      I’ve done it too and it’s amazing when it works, but I would say different white chocolate gave different results! I tried amount 6 one day some cheap, some expensive and it wasn’t always cost so it must be scientifically better with more of something???? Cocoa butter maybe??

      Same. It's called "blonde chocolate" or caramelized white chocolate. So good. I've made it in the microwave though. So much easier. Watch Cupcake Jemma's video on the method. Also Callebaut Gold is it already made. ❤

      Yes, thank you! Caramelised white chocolate is FANTASTIC, it's a little nutty, it's less sweet, it makes for a great ganache. You can just put a block of white chocolate in the oven and you don't need to stir either.

    So fun fact, Coke does send McDonald’s a different syrup but it still cokes in a plastic bag, but McDonald’s also does research to make sure the straw is the right size for perfect bubble distribution, and for perfect carbonation to syrup ratio 🥰 (from a former employee who changed out the syrups regularly)

    Sooo great to see you guys again!! Wired magazine did an investigation into why McDonalds' cokes taste better and they say it's not the syrup. McDonalds has special filters for their water that make everything more magical... including ice and anything made with water so all their sodas should taste better, but maybe their coke syrup is also superior given the stainless steel containers?

      Coke comparison. The difference could be between “pre-mix” and “post-mix”. You add “water” to the syrup to get your soda. Pre-mix is basically mixed together in the large cans and is then dispensed. The post-mix is blended with liquid while being dispensed. The amount of liquid can be varied and therefore increased to get more cups of soda for your $$.

      I was told two different things that were meant to be explanations for McDonalds soda: 1. They keep the unmixed syrup pre-chilled and 2. that the carbonation is different. I don’t know if either or both explain why their soda is so good (or if either one is even true!), but they’re both interesting theories.

    I’ve made caramelised white chocolate many times. You can even do it in the microwave (h/t cupcake Jemma) but I don’t need to make it now because they sell it in shops here (Australia) and that’s much easier! It does taste different - like caramel chocolate. Yum!

      We used to post once a week, then twice a week and almost died lol then once a week again and couldn't keep up with putting out content we were proud of. Every other week is our sweet spot right now, unless we get hit with a million bad things all at once and take a never before in ten years on RUclips three month break LOL

    My aunt had a Chinese restaurant and we had steel containers from Coke. I believe the difference was simply, when you use steel, it’s premixed with water from coke. The box coke mixes with filtered water at the machines. Probably why it tastes different. I Also heard the main reason McDonalds coke is better is because of the ice. It’s supposedly cut in an ideal shape meant to cool the soda.

    For the fruit roll up, you need fruit sorbet. I did mango, I was so sceptical but it was really good. I like the crunch. I ended up putting it on top so it's crunchy but I don't have to bite it. Sooo good

    soda fountain drinks all depend on the calibration of syrup to soda ratio. My first job was at a Burger King where I calibrated the fountain every morning. This was before they had syrup in the bag in box method. The tanks really do make a difference.

      That's another factor with Mcdonalds apparently, they adjust the ratio so that as the ice melts it doesn't get watered down. So at first it might be a bit strong if anything.

    I caramelize white chocolate a lot but in the microwave. This way you can stir it properly in the bowl in more frequent intervals.
    I have found a huge difference and I let it set in the fridge and break it up for cookies.

    OOoh for the drink and whether its container matters: It does! In the early 00's, Mountain Dew had a series of limited edition Green Label art tall aluminum bottles. They were perpetually sold out, because the flavour was so much noticeably superior to even regular cans on TOP of being collectible. It 100% makes a difference

      Stale gummy candy is so much better! I don’t want to make sure my dentist’s number is saved in my phone before I have a handful of gummy bears. I let my gummy bears get stale for 2-4 months (longer in the summer, shorter in the winter), shaking them every few days to make sure they stale evenly. It greatly reduces that wired gelatin taste too.

      Hot sugar is temperamental and it’s not as simple as adding water. The hot sugar syrup is heated to a temp that, when allowed to cool, sets into a “hard crack” texture, meaning it sets into that hard candy glasslike texture that crunches and snaps. If you added water to the hot syrup, you would disturb the composition and the hot syrup would no longer set into a hard, shiny candy coating. It would cool down and stay gooey, leaving you with a sticky sugar goo coating.
      For sugar to set into that hard crack stage, it has to be heated until it’s within a specific temp range. As it cools, it gets thicker and firmer, until it finally sets into solid shiny hard candy. Maybe Laurie left the bowl of melted Jolly Ranchers on the counter for a while before dipping, and the syrup started to cool a bit and get thicker? Dipping the fruit when the syrup is straight out of the microwave (assuming it was heated hot enough to reach the hard crack temp), that’s when the syrup would be the most runny and allow the thinnest coating to be applied.
      Just like how chocolate gets hot and melts, then sets when cooled - the melted chocolate is at its thinnest consistency when it’s very hot. Letting the chocolate cool and then dipping , would make for a thicker coating. The chocolate started to firm up a bit as it cooled, no longer a thin runny consistency, and so your coating wouldn’t be thin.

    This looks like it was such a blast! Btw, the frozen fruit roll-ups has been a trend for quite a while. People just straight up stick it in their freezer and the end result is a crunchy bite but it melts upon resting in your mouth! Is that how the fruit roll-up icecream burrito tasted? lol

    I was coming in to say I have caramelised white callibaut and it worked….ive also caramelised both Lindt and Milkybar (don’t know if you have milky bar in Canada) and they all worked. I really dislike white chocolate but really liked the caramelised version…. I think the slight bitterness of the caramelised sugars offset what I find sickly sweetness, good luck if you try again!

    Caramelised white chocolate is pretty big in Australia few years ago we got it from Cadbury called Caramilk & they sold out in shops everyone was stocking up and buying loads, shops had to put up signs saying only 2 blocks per customer it was crazy then some people found out you can get white chocolate & put it in the oven for a bit & make it. Now we have caramilk blocks & different brands & even caramilk kitkats.

      @@Nella296 Ah yes, gesundheit is one of those random words that has made it over to English for common use, to the point where many of us forget what language it technically is, lol. We use it interchangeably with "bless you" for sneezes. I'm not sure if it's a thing in all English-speaking countries, but at least in the US, it became a thing due to the large German immigrant population. It was actually used for a lot more, especially in advertising from my understanding, but it fell out of fashion during the war, and was relegated to just sneezes, lol.

    Coke thing - there's actually a while science to it and an R&D team at each restaurant studies this. Different restaurants have different ratios of syrup to carbonation (and different straw diameters they choose based on how they want you to experience their soda mix). If they think their mix tastes off, they can call their distributor and order a brix kit to check the ratio. So like where I live, if i want a more carbonated Dr Pepper, I'll go to McDonald's. A sweeter but not too sweet one, Sonic. A super sweet one, Spangles.

    I worked at McDonald's for a long time. They do not get come in stainless steel containers. It's about the way they calibrate their soda machines...they use more carbonation than other restaurants. If you've never calibrated a soda machine, there are two knobs. One for the amount of syrup that is suspended, and one for the carbonation that is dispensed. But they definitely get their come in bags just like every other restaurant.

    As a former McDonald's employee, yes, the syrup is in metal containers. Its delivered then pumped into them, then useing the pressure from the carbon dioxide where it its then dispensed in fusion at the fountain.
    But the fact that it's the quality of freshness and "made on the spot" is why it tastes even better.
    I had have the pleasure of switching the feeder lines on the tanks many times during my few years working for the Arches. And the pain of hooking it up. But I swear, even though the other soda is dispensed from soda bibs, it's the pressure in the line that makes it all taste really delicious. McDonald's soda lines are off the charts cause they keep it real so that it tastes fresh every time no matter the flavor you choose.
    P.S. I'm an advid Dr. Pepper enthusiast.

    I caramelize white chocolate melting disks in a crockpot. Discovered it by accident.
    There's a sweet spot where the chocolate gets all toasty & caramel-y before the texture goes gritty.

    Tbh anything that is above mildly spicy is killer in ice cream(that is a solid food)
    Especially spicy seaweed, if you crumble it up, put it in ice cream, sir it and then freeze it again it is *SO GOOD*
