can you make video on how to read a person punches or kicks. like knowing when they are throwing a left or right punch
its hard to tell when they're throwing left or right punches especially kicks, and so in order to cope with this is through training such as defending from punches coming unexpectedly as this is the only way and also being adaptable in the fight.

Unfortunately making a video will not help you, but training will, because to learn this you need experience. You can try training on the wing chun energy drills to build up on your sensitivity and your reactions. Then you may want to spar more often so you can learn to ready peoples movements.
That's instinctive. You can learn how to block but anticipating is almost all reflexive. You can feint and throw dummy strikes to pick up on a habit or pattern your opponent shows so then when he reacts to the diversion you can strike the opening that you saw when throwing the dummy strike.

Very true, but Wong Sifu concerns himself more with real life situations than those encountered in combat sports.
In the outside world, you don't know if an attacker has friends nearby or his skills.
In the outside world, there is no control of situations/environment, only what is happening. This is why the martial artist trains his/her awareness, & if forced to use their skill, they shut down their attacker as swiftly as possible.

practing on wood helps I use the my door frame and it just use my forearm to hit it it was hurting at first but now I feel no pain and my mess with my brother he says my forearms feel like iron

For example, like in the Batman T.V. series where the "goons" keep coming, when the first dudes get their asses kicked by the heroes.
