Come to Santa Clara California, look up a bakery called Crossainte. They make the cubes and the best tasting crossaint I've ever eaten.

tutto molto bello e preparato con grande maestria, quello che faccio fatica a capire è perché usare la pasta sfoglia per un prodotto che non viene sfogliato a causa dei motivi che la chef ha spiegato. Credo sia un esercizio di stile un po' superfluo, anche se immagino il risultato sia comunque molto buono

È la fine che sta facendo l'arte culinaria in generale, Gualtiero si sta rivoltando,povero,per avere successo basta mettersi a cucinare sul terrazzo di casa e dire due cazzate in romano,che schifo
In realtà il prodotto è sfogliato solo che per mantenere quelle forme perfette si è dovuto trovare un compromesso con l'alveolatura e l'umidita della stessa, di conseguenza con la sensazione tattile al palato che alla fine risulta più vicina ad un effetto brioche che ad un effetto croissant.
Secondo me comunque la tecnologia è ancora giovane e sicuramente si può fare meglio, sia forse a livello di costruzione dell'impasto, ma soprattutto a livello di stampi che a me sinceramente non convincono fino in fondo.
Se la moda riuscirà a tenere nel tempo anche i risultati tecnici miglioreranno di conseguenza a mio avviso.
@@Adanos163sarà il tempo a dirlo, io credo invece che possa pian piano diventare un prodotto serio e affermarsi pienamente superando la moda di un periodo.

Il problema è che la ricerca della "forma" a scapito della "sostanza" è uno dei pilastri del food-porn. Questi sono prodotti bellissimi e sicuramente ottimi per gusto e consistenza ma le viennoiseries nascono per svilupparsi in dimensione e ariosità... se le rinchiudi in uno scafandro non fai innovazione ma esercizi di stile un po' fini a sè stessi e ricerca del consenso "social"...
Questa la mia semplice ed umile opinione, non ho nulla da insegnare ma magari indurre una piccola riflessione...
Purtroppo non vengono dannati dalla piaga food porn, semmai supportati.
Senza i social, il cubo non sarebbe mai diventato virale e sarebbe rimasto l’esercizio di stile che è.

Bakery in San Jose, CA makes the cubes. Its called Crossainte. They use imported french flour and butter... they have the best ceossaint ive ever eaten. The butter is sweet and the layers melt in your mouth.

Higher W = Higher amount of Gluten in the Flour.
Higher amount of Gluten = Higher amount of liquids that the Flour can absorb.
Higher amount of liquids = Higher amount that you can let the dough rest and rise/leaven, mature and ferment.
Higher amount of mature, fermentation and leavening = You obtain a softer product that can have crunchyness outside BUT very soft inside. Also easier to eat and digest.
A low W flour is generally used for products that does NOT need water or anyway that does not need leaving.
An example? A tart / shortcrust pastry/ Crostata

Croissant would be softer and even than these as they are compressed in the mold.
The cube one would be crunchier as such.
