    Arrowroot Bread - vegan option and
    Croissant-Style Gluten-Free Bread
    Gluten Free and Lactose Free
    Today you will have two versions in one recipe
    Yeast Sponge
    7g dry and instant yeast
    1 tbsp organic brown rice flour
    1 tbsp brown sugar or other sugar of your choice
    Mix
    3 tbsp of warm water (37ºC)
    Mix, cover and set aside
    Psyllium gel
    360ml of water at 37 -38ºC
    add:
    17g psyllium powder
    and stir well to form a gel without leaving lumps
    Reserve
    If your psyllium is not powdered, you can use 15g instead of 17g (the procedure is the same)
    Mix/dough
    In a bowl add:
    150g arrowroot flour (organic/organic) You can replace it with corn starch or sweet cassava flour in the same proportion.
    150g brown rice flour (organic/organic)
    50g buckwheat flour (organic/organic)
    1 cc of salt (if you like saltier dough, you can add a little more)
    Mix well and add:
    Yeast Sponge
    Psyllium gel
    1 tbsp apple cider vinegar
    Take it to the mixer and keep beating it by hand.
    If using a mixer, use the hook to beat the dough.
    Beat at low speed and then switch to medium.
    Make sure all the flour is well mixed.
    Do not add more water unless your dough is very different.
    Add
    30ml olive oil: or oil of your choice
    Beat well to incorporate the oil into the dough.
    Note the mass point
    It is very modelable, does not stick to the basin or hands
    Put some rice flour on the counter
    transfer the dough to the counter

    I'm going to use a gutter pan for the buns
    make a ball and roll it out with a rolling pin
    roll and shape the bread, seal the seam well, leaving it down and place it in the chute
    Cover and let it ferment for approximately 30 - 40 minutes (depends on local temperature).
    Preheat the oven to 200ºC with a tray at the bottom to generate steam when baking the bread.
    After fermentation, make longitudinal cuts in the bread and decorate with sesame seeds (optional)
    Place in the oven at 200ºC and add boiling water to the tray, in addition to spraying the oven walls to generate steam, close the oven and set 15 minutes.
    After this time, remove the tray with water from the oven and finish baking the bread. For approximately another 10 to 15 minutes. Do the toothpick test.
    Remove from the oven and transfer to a wire rack to cool.
    Cut once cooled, however, these rolls are very tasty while still warm.
    If you prefer, you can make a large loaf.
    Croissants:
    I used half the dough to make the croissants
    This is completely optional. I made it because the dough is very good to work with and I wanted to give you this suggestion.
    The buns are vegan, but these croissants, I brushed them with a mixture of egg yolk and a tablespoon of coffee.
    Roll out the dough with a rolling pin as thin as you can.

    If you prefer, you can curve the buns (croissants) like I did.
    Cover and let it ferment for the same time as the bread.
    After fermentation, brush the mixture of an egg yolk with 1 tbsp of coffee
    Bake in a preheated oven at 180ºC for approximately 25 minutes
    Remove from the oven and let cool on a wire rack
    They look beautiful and delicious
    You can serve with jelly or whatever you prefer.

    Posso substituir a farinha de trigo sarraceno por alguma outra farinha?

      Sim. Pode usar frinha de tef, amaranto ou farinha de arroz integral. Mas como já temos uma boa quantidade de farinha de arroz, escolha outra. Mesma proporção.
