My key fob battery is the original and there is what I think is dielectric lubricant on the parts, should some when I replace the batteries and since mine doesn't have the plastic piece (what's that for, doesn't that stop the battery contact and therefor no power to the mechanism) should I use dielectric grease in between the batteries?
that's anti-corrosive gel. It wouldn't hurt to put it on but I usually never do. I find that if the fob is kept dry I don't have issues with battery corrosion.
It's interesting that Amazon is selling Ford fobs. This is a surprisingly bad design. Ideally you'd change batteries by unscrewing a cap, removing the old AA or AAA battery, insert new battery, and screw cap back on. The good news is that if your fob batteries are dead, you can put the fob into a depression under a mat in the front of the center console.

I have a red light appears that flashes 3 times. The flashing red light appeared after replacing the batteries and the remote doesn't function.

I have never used one without that piece but have seen other comments where they say it works without it

No it takes two Cr2025 batteries as the video says
I had 2032 batteries laying around the house. I was able to use those in my fob without issue. I have the identical fob shown in the video.
