Then I put everything in the slow cooker to finish off the cooking. I usually prep it the night before or in the morning and let the chops cook very slowly all day. It’s handy when the day is busy. If one just snips the edge where the thin gristle is, the chops won't curl up. Here in Spain, pork chops are difficult to buy so we by lomo (loin) and cut off steaks and use them as chops. The remaining part of the loin makes a delicious roast.

Good mustard is essential of course, and a couple of apples (I use Braeburn) cored, sliced and caramelised with the chops never go amiss. But those 'chops'...more like cutlets, get yourself down the butchers and ask for proper loin chops, inch thick, inch of fat/rind, start them off in the pan rind first, lots of smoke, lots of splatter, tons of flavour 🥩😋

Think you're struggling there my friend, any meat slow cooked will release it's fat into the cooking liquid, and leaner cuts will just dry out and have no savoury flavour. Braising steak would be a good choice, trim any fat and slow cook in a broth of low sodium stock and a touch of red wine. Chicken thighs, skin off but bone in, will make a nice casserole, and now there are non suet dumplng mixes too. There is also the option of using a fattier cut of meat but leaving it to cool overnight once cooked. Next day the fat will either be solid on the top so you can spoon it off, or it will be liguid and you can lay kitchen towel on top to absorb it and throw in the bin.

I make this recipe on rotation for awhile I would advise to get the pork loin steaks with no bones in and cook it the same in the video. No bones to contend with while eating much easier.

Can I substitute the cream with milk & thicken with cornflour? I tried your recipe & it turned out great but I find the cream is too rich for my stomach. I find it too rich in anything.
Yes, this recipe would also work well with pan-fried chicken breast finished in the oven. You would need to fry the chicken for a few minutes longer, as chicken breast is thicker than pork chops (ensure the chicken is piping hot and no longer pink in the middle). Hope you enjoy :)
Hi Matt, yes they don't need too long in the oven as they've been pan fried for 3 mins each side first. You might need to adjust the time in the oven depending on the thickness of the pork chops you're using, you want to make sure they're cooked through until the pork is no longer pink in the middle.

Strong flavours but used sparingly I'd suggest a chiffonade of fresh sage and fresh tarragon, just a sprinkle though.
