If you have a recipe that you like using wholemeal, you certainly can use the same cooking directions. Making bread with whole wheat flours is a little different so it isn't just going to be a 1:1 substitute of the flour.
What's the difference between using the Combi Crisp and Combi Bake function for bread? Both use steam, and I thought the Combi Bake function was supposed to be better suited for doughs and pastries?
Combi bake preheats/steams for 20 minutes which is too long in my experience. Combi Crisp only preheats/steams for about 5 minutes before switching over to the dry heat. The steam is still there for about 5 more minutes and then dissipates which is perfect for bread and cakes. When choosing which function to use, I think about how long I want the food to be in a moist cooking environment versus dry. For breads and cakes, 8-10 minutes of moist cooking is plenty. For whole chicken and other larger meats I would lean towards Combi bake.
I've been making homemade sourdough for several months, but the kids don't like the texture or taste. I'm going to try this one in my Combi today. I have lots of bread flour. Can I use that in place of All Purpose, or will it affect tve texture?

If you have a bread machine just put in on the dough setting!!! You get your first rise that way too!!
Love this recipe! Can I use my Kitchen Aid handheld with a dough hook? I don't own a stand mixer.

Bread flour may make it a little chewier and you might find you need more liquid, but you can use it.
