- Green Chili is one of my sons favorite dishes. The best green chili's come from Hatch New Mexico, so I always use them when I'm making green chili. I generally use fresh green chili's, but I went through all of them that I had on hand, so I won't get any more until next harvest which is usually in September. The frozen green chili's that I used are an excellent alternative. They sell them in mild and hot.
This recipe calls for chicken stock. I used homemade chicken stock which is preferred, but any chicken stock will be fine.
I personally add my roux after everything comes together in the pot. There are other recipes that call for it being added to the pork in the beginning. I feel that you can control the thickness better doing it this way. I like to freeze my leftover roux to be used for later, so I generally make big batches of it.
Ingredients for 2 quarts of Green Chili:
1 pound Diced pork or Chicken
16 ounces Green chili's Diced (1/2 to be blended, 1/2 to remain chopped)
8 Cups Chicken Stock
2 Roasted jalapeno's (Optional)
1 Carrot (Optional)
1 1/2 cloves Garlic
1 1/2 Diced onions
1 habanero pepper ( Optional)
Oregano 1 1/2 Tbsp Cumin
1 1/2 Tbsp Cumin
1/2 bunch Cilantro chopped
1 cup diced tomatoes (More or less can be added)
Salt to taste
The Roux (Thickener)
1/2 Cup canola or vegetable oil (butter, lard or bacon grease can be used)
1/2 Cup flour
***All of the roux may not be needed to reach desired thickness"""

I recently moved to Texas from Colorado and the don't even know what green chili is here. That's crazy! If you ask for a smothered burrito they smother it with chili con carne. Wth?😂

After 30 years of living in Colorado and then moving to TN, I've been looking everywhere for a good green Chile recipe. Thank you.
There’s not many videos of green chile on RUclips. My Colorado version:
Freshly roasted hot green chiles
Tomatillos
Roasted Jalapeños
Serrano Peppers
Roasted Tomatoes
Onion
Roasted Garlic
Cilantro
Diced Pork
Spices (Cumin, Chili Powder, Paprika, corriander, onion powder, garlic powder, salt, black pepper)
Chicken Stock
And of course, a big pot of beans and fresh tortillas or sopapillas. I blend half of the veggies together in a blender to make the chile thick instead of using flour.
Someone serves this at literally every family occasion!

Add 4 large chopped jalapeños instead of another bag of New Mexico chiles and it’s exactly the same. I promise you won’t regret it 🥰

That looks delicious, I love how you used such colorful ingredients. I make mine very similar to yours but instead of tomatoes I use tomatillos. I’m a Colorado native as well. Was born and raised here

We recently moved to Myrtle Beach and I can assure you, there is none to be had... anywhere! WE NEED OUR GREEN CHILE!!🤣
On our last visit home and after watching this video. I stocked up on the frozen chilies and brought them back with us. Used your recipe with a couple minor adjustments and voila an instant hit! My husband and our friends who also moved here from Denver, just love it!

Oh my gosh I'm from Colorado too and I live in Pennsylvania now and they have no idea what green chile is, can't find hatch chiles anywhere canned or frozen even... been using roastdd poblanos to try and recreate the wonderful flavor of the fire roasted hatch 😍 not quite the same but it's close enough to satisfy me until I go back home for a visit

Nice video! I’m from Colorado and we eat green Chile religiously in our family and it’s very similar to this recipe. We add diced potatoes to help thicken the Chile and some of my moms fresh flour tortillas and everyone is happy.

I used diced chicken and I got it nice and crusted up like your pork and I didn’t do as much oregano since I’m not a fan of it, but I didn’t want to leave anything out so I still sprinkled a lil bit, lol! Colorado has beter variety of chili's bottom line from brighton dynamite to pueblo hot! New Mexico is only good for red chili leave the green for the professionals.

I'm a Colorado Native that lived in N.M. for a year. I learned how to make Green Chili from my first boyfriends mom, it was the best. I love flavor, not something that's going to blow m head off, I'll stick to chili's and leave the jalapeno's and habanero's to someone else. I have never seen anyone add carrots to theirs.
😂😂😂 If you love flavor as you say you do then your missing out bigg time not adding 3-5 habaneros! They add a huge flavor punch! I wouldn’t turn my nose up on jalapeños and serranos either, adds multiple flavor profiles. Throwing the green chiles over hot coals to roast them, then steam, then peel away black skin adds a whole other flavor profile also! The best pork chile verde I have ever eaten was made by a native Mexican women in Rosenberg, Tx and it was pure serrano peppers, nothing else.....

It is green chile season, so I am buying as much as I can and roasting them. I came across a really good fire roasted frozen brand called bueno. It is in a plastic container. I really like that also

I'm so mad. I just ruined my 4th batch of green chili. Having come from Colorado and ended up in south Texas has created a problem with me trying to perfect this recipe. Thanks for this video. There needs to be absolutely NO tomatillos in green chili. Tomatillos are an abomination and I don't know why almost every green chili recipe has them.

I use green chiles, jalapenos, serranos, tomatoes and tomatillos. That acidic flavor of tomatillos can be countered with some honey or sugar.

I actually add potatoes to mine as well, this also helps with thickening the dish as well. I am not a big fan of oregano, one thought is to add the oregano to the blender so you dont get the hard bits like you could when using a bay leaf. At my local Hispanic market they sell what they call Chales, which for those not familiar are fried pork pieces, similar to chicharones but mostly meat not the skin. Once these hit the sauce they soften up a little and are very good in the sauce. I also make it with chicken which I prefer, a little "healthier" than the fried pork. Also have you tried making your roux with the chicken stock instead of adding all of the extra oil to the dish? works just as good but not additional oil. Still looks good, just a couple of tweaks for me. Thanks for sharing!

Have you tried this with pork stock instead of chicken stock? That's how I've made it in the past, so I'm curious about the flavor difference. 2. Any words of caution against blending the tomatoes with the chilies? Thanks again!
I've never used pork stock, but it sounds like a great idea. I may try that. I do add tomatoes like that on occasion and it is great also. I hope where you live now is warmer than it is in Colorado right now. It was a mild winter, but it is dragging on longer than usual
Good green chilli but you did throw me off with adding carrots and cilantro
I started using pork stock for this. It is delicious. I no longer make it unless I have pork stock.
